Easy Caramel Custard/Pudding in Idli pot

This Caramel Custard is a creamy,luscious dessert made with no fuss,no special equipment,no rocket science. Once you know how to make ,you will never stop making this Easy Caramel Custard.

Caramel Custard /Pudding is a creamy, custard dessert with soft caramel top. It’s made all over the world in various methods, Egg less, using custard powder,baked, steaming etc. It’s an easy and versatile dessert which can be crowd pleaser at any party or get together.Kids will love this as adults.

How did I make Caramel Custard?

I made this Caramel Custard/ Pudding using steaming method. I made this in our normal idli pot. You can also steam this in pressure cooker.

Making Caramel

First step starts with making the caramel which should be done carefully.Make caramel in the steel pot which you choose to make the caramel custard. That way,it will be easy for you to act fast before caramel gets hardened.

Making Custard

Then start preparing custard.Custard is nothing but egg and milk mixture. Steam it till cooked.Chill before you serve.Enjoy the creamy caramel custard.

INGREDIENTS

For Custard

Whole milk – 1 cup

Egg – 2

Organic Sugar – 1/2 cup

Vanilla Essence – 1/2 tsp

For Caramel

Organic Sugar – 1/3 cup

Water – 2 tsp

METHOD

  • Start with making caramel. For making caramel,take the steel pot  you choose to make this dessert.
  • Take sugar and water in the pot. Heat it in medium flame till sugar melts.
  • Swirl the pot occasionally. Don’t use spoon and stir. The sugar crystallizes by doing this. ( from personal experience)
  • When sugar completely dissolved and it start turning golden. Keep swirling it in heat till the color becomes golden brown.
  • Remove from heat and swirl the caramel around inside the pot.Do this step fast. Else the caramel hardens.
  • Start heating the idli pot with required water.
  • In another bowl,make custard by beating eggs and sugar.
  • When the sugar dissolves,add milk and vanilla essence.Mix well.
  • Pour this custard mixture in the pot with caramel. You can also strain the custard mixture before pouring .
  • Cover the pot with foil and poke few holes with tooth pick.
  • Place this pot inside Idli pot and cover it.
  • Steam till cooked.
  • When you insert a tooth pick in pudding, it should come out clean.
  • When it cools down,de mold in a plate.
  • Chill it in refrigerator for at least 2 hours.
  • Serve chilled.

NOTES

  1. You can strain the custard before pouring it into caramel.I didn’t strain.
  2. Adjust the sugar as per your requirements. The above mentioned sugar was perfect for us.
  3. Use Whole milk for creamy texture.
