Paal kova – A South Indian dessert

Paal Kova is a famous South Indian dessert made with only full fat milk and sugar.No fancy ingredients,yet rich creamy dessert is the result. It’s usually time consuming process but the end result will be totally worth it. To make it easier,some may use condensed milk to make Paal Kova. Some use Kova while preparation.

This Paal kova is made in auspicious days. As Gokulashtami is nearing I present this to you. Gokulashtami is birthday of Lord Krishna celebrated all over India. This Paal kova is made and presented before Lord Krishna.

How did I make Paal Kova


Making of this dish is so simple.Only thing is once it reduced its quantity,you have to stir continuously. If not it will burn. Always remember to use heavy bottomed pan.It prevents burning of milk.Once the milk boils,keep the flame in medium.When the cream forms,stir it in the milk again.Add sugar only after the milk reduced to half.Only use whole fat milk.It gives you nice creamy,rich texture to this dish.

INGREDIENTS

Whole Milk – 4 cups

Organic Sugar – 1/2 cup

METHOD

  • Take whole milk in a heavy bottomed pan.
  • Bring the milk to boil,then reduce the flame.
  • Layer of cream forms on the milk.Remove it in a spoon and add again in the milk.
  • Do this whenever the cream forms.
  • When the milk is reduced to half add sugar.
  • Stir continuously from this point.Milk starts thickening.
  • Do not stop stirring.
  • It will form to a thick mass and the liquid evaporates.
  • Remove it to a plate.It will get thick little more when cools down.
  • Serve warm or cold.

NOTES

  1. Do not stop stirring once the milk reduced to half.
  2. If you are adding kova,add unsweetened if adding sugar or omit sugar if using sweetened kova.
  3. Add kova once the milk reduced to half.
  4. Use only full fat whole milk.It gives you nice creamy and rich texture.
  5. The sugar mentioned is perfect for us.You can increase or decrease as per your taste.
