Ice Cream Cake

I got the inspiration of this cake from this site. It is my friend Vidhya’s blog. We came to know about each other through blogging and she is one of the person who encouraged and helped me in blogging.

As the days are getting colder, I want to finish up Ice cream that was lying on my freezer. I don’t want to eat it as such but to use in any recipe. That’s when I stumbled upon her recipe and without a second thought I want to try it.

How did I make Ice Cream Cake

When I say Ice cream cake, it’s not the usual Ice cream sandwiched Cake. It is a cake baked using Ice cream.You can use any flavored Ice cream.I made it little tweak in the recipe though. It was hit in our family. Both the kids and my husband loved it.

You need just 4 ingredients as the title says. Just Flour,Ice cream ,Baking powder and Sugar. You can add any nuts or chocolate chips, tutti frutti to the batter when you bake. It’s all up to your imagination. I used homemade Mango Ice cream for this recipe and made it in two pans one with tutti frutti and another with Chocolate chips. Both were great.

INGREDIENTS

Ice cream – 2 cups Softened

All Purpose Flour – 1 1/2 cups

Baking Powder – 1 1/2 tsp

Sugar – 1/2 cup

Chocolate chips/ Tutti frutti – 1/4 cup (Optional)

METHOD

  • Pre heat Oven at 350 deg F.
  • Take Ice cream and sugar in a bowl.
  • Using a whisk or hand blender beat it thoroughly.
  • When the sugar is dissolved , add flour and baking powder.
  • Fold it well till the flour is incorporated.
  • Add Chocolate chips or tutti frutti.
  • Pour the batter in a greased cake pan.
  • Bake it in pre heated oven for 20 – 25 minutes or till inserted tooth pick comes out clean.
  • Once it it cooled down completely turn the pan upside down and transfer cake to a plate.
  • Serve.

NOTES

  1. You can use any flavored Ice cream,store bought or homemade.
  2. You can add any nuts to this cake.
  3. The cake is mildly sweet. So adjust sugar as per your requirements.
  4. I baked it in two small pans. But this can be made in single pan.

    Hi ma’am, i tried our this cake. But it turned out to be hard. It was not soft and spongy.

    1. Thank you for trying..and this cake will not be as soft and spongy as other normal cakes. This is little dense.
