Vegan Magic Cookie Bars without Condensed Milk

Happy New year to all. How did you celebrate your New year? Did you take any resolutions? Mine was  not  to waste any foods. That resulted in this Vegan Magic Cookie bars. Do you want to know how? Keep reading.

Vegan Magic Cookie Bars


So the story goes like this. I had lots of graham cookies and frozen banana. My kids won’t eat graham cookies anymore and I’m tired of using frozen banana in  Pancakes. As my pancake lists are growing, I don’t want to try another pancake with those bananas.

As I was looking for a recipe where I can use these graham cookies, I stumbled upon Vegan Magic Cookie Bars. I jumped out of joy as not only I can use my graham cookies but also my frozen bananas too. This is much easier to make as the name suggests it’s really magical. My daughter liked this so much that she keeps on asking for this.

How did I make Vegan Magic Cookie Bars

Usually Magic Cookie Bars are called 7 layers cookie Bars as it is made in 7 layers which in most of the times, crackers layer, any nuts layer then topped with sweetened condensed milk layer. But as I’m making this vegan, I didn’t use sweetened condensed milk. Instead I used banana and my cookie bar has just five layers, means just five ingredients. How cool, is it?

My Cookie Bar first layer is graham cookie layer, then topped with banana, chocolate chips and roasted coconut to add the crunch. If you like nutty, you can add nuts too. In this we have to bake the graham layer first to set, if not when we add banana layer the graham layer will become soggy. To avoid this, bake the graham layer for 15 minutes first before adding other layers. Hope  you will give a try and I can’t wait for your feedback.

INGREDIENTS

Graham Cookies – 2 cups

Melted Vegan Butter / Honey / Maple Syrup – 4 tbsn

Banana – 3

Chocolate chips & Butterscotch chips – as required

Coconut – 1 cup shredded ( see notes)

METHOD

  • Pre heat oven to 350 Deg F.
  • Take graham crackers in a food processor and pulse it. Add Melted butter or honey or Maple syrup and pulse it to form crumbled texture.
  • Take a baking tray. You can line it foil or just grease it.
  • Pour the crumbled graham cookies to the baking tray and press it tight.
  • Bake this in pre heated oven fro 15 minutes.
  • After 15 minutes take out the graham layers and let it cool for 15 minutes.
  • In the mean time, mash the bananas.
  • Once the graham layers is cooled down, pour the mashed banana over it and spread it even.
  • Add required chocolate chips. Here I’m not restricting you to use fixed quantity. So go generous (lol).
  • Top it with roasted  Shredded Coconut.
  • Again bake it for 30 minutes.
  • When done take out from the oven and let it cool.
  • Once cooled down completely, cut it into squares and serve.
  • Can be refrigerated in air tight container for 2 weeks.

NOTES

  1. I used normal shredded coconut and roasted it along when I baked the graham layer. You can use desiccated coconut too. If using that, then you can add desiccated coconut directly when baking the bars. Don’t have to roast it.
  2. You can use any chocolate chips of your choice.
  3. If you don’t want your coconut to  get brown, then just bake the bars for 20 – 25 minutes.

This Vegan Magic Cookie Bars is a clever way to use up ripe bananas and graham cookies. This is totally addictive and kids will love it for sure.

  8. Looks delicious. But for your information honey and butter is not vegan. Unless if you use plantbased butter. I am happy that you skipped condensed milk:)
