Baby Potato Roast – Indian Style

Have you ever saw a person who hates Potatoes?Me never. So this Baby Potato Roast  recipe is my latest addition to my potato love.

Baby Potato Roast

Each one of us have a favorite potato dish. Be it a curry or stir fry or an appetizer, we love potatoes in any way. You can try my appetizer  Potato/ Onion bhaji or  5 ingredients Roasted Garlic Potato Wedges .

This Baby Potato Roast is a simple, easy but delicious recipe. You need just a handful of ingredients from your pantry. This is Indian style of roasting potatoes. You can have this as an appetizer or tastes best as a side dish along rice with Okra CurryPineapple Rasam or Kollu Rasam.

How did I make Baby Potato Roast

I used medley baby potatoes to make this roast. So you can see purple and golden baby potatoes. Microwave potatoes or cook for 10 minutes in boiling water. Then marinate with spices for at least 10 minutes before roasting in pan. You can add or avoid onions but I recommend to add it as the caramelized onions give a bit sweetness to the dish.
