Mixed Vegetable White Kurma

After having all those sweets and desserts, now heart ( and tummy) longs for some delicious kurma with hot rotis. This Mixed Vegetable White Kurma exactly satisfies the craving.

Mixed Vegetable White Kurma

Kurma is an Indian curry with grounded coconut and spices . Kurma can be made with meat or veggies. The meat or veggies are cooked in grounded coconut and mild spices. When I say spices, spice powders are not added and whole spices are grounded with coconut. That’s why this kurma  is white in color.


How did I make this Mixed Vegetable White Kurma

The only time consuming part in making this is chopping the vegetables. Once it is done,this can be done with in 30 minutes. Just sauteing the vegetables and cooking it in the ground coconut. That’s it.

I used pressure cooker to make this. But you can make it in pot also. In that case, cooking time differs. The vegetables also can be of your choice. You can increase the hotness if you like by adding more green chilies. This Mixed Vegetable White Kurma usually goes well with Vegetable PulaoAppamRoti.

INGREDIENTS

Mixed vegetables – 2 cups chopped ( I used potato, sweet potato,carrots, peas, cauliflower)

Onions – 1/2 cup chopped

Green Chili – 2 Slit lengthwise

Bay Leaf – 1

Cardamom – 2

Oil – 1 tsp

To Grind

Coconut – 1/2 cup

Roasted Gram Dal – 2 tbsn

Cinnamon stick – 1/2 inch

Cloves – 2

Fennel Seeds – 1/2 tsp

Khas Khas – 1/2 tsp

Ginger – 1 inch

Garlic – 2 cloves

METHOD

  • Grind all ingredients under the ‘To Grind’ lists to a fine paste with required water.
  • Heat oil in a pressure cooker pan. Add Bay leaf and cardamom.
  • Add chopped onion and green chili.
  • When onion turns translucent add the chopped vegetables and saute’.
  • Saute’ for 2 minutes and add ground coconut paste with required water.
  • Add required salt and closed the lid.
  • Cook till the 3 whistles or until vegetables are cooked.
  • Open the lid when the pressure is gone and mash vegetables lightly.
  • The kurma would be watery but when cools down it becomes thick.
  • Serve along with Pulao, roti, chapathi,paratha.

NOTES

  1. Add vegetables of your choice.
  2. If you want more spicy, add more green chili.
  3. Adjust water as per the consistency required.

  17. Being Punjabi, coconut is not a regular item in our home, Can I make it with desiccated coconut. If not, then next time I know what to make with that leftover coconut instead of making coconut chutney 🙂 So I have option now
