This Potato podimas is the recipe from my Mom – in – law.This is such an easy recipe that you need just 15 minutes to make from start to your plate.( time may vary if you opt to cook potato in pan instead of pressure cooker). Mash the pressure cooked potato coarsely and stir fry along with the spices. You can add coconut if you love to( I love adding coconut). This tastes best with Okra Curry or Pineapple Rasam.


How did I make Potato Podimas

Making Potato Podimas is just a breeze. As I told earlier, you need just 15 minutes to make from start to end. Pressure cook potatoes and saute’ it with chopped onions, spices and grated coconut. Adding coconut is optional though I would highly recommend to add.

So how easy to prepare this when you really don’t have time to make lunch but still have to make yummy lunch. Isn’t it?

INGREDIENTS

Potato – 3 Medium Sized

Onion – 1/2 cup Chopped finely

Mustard Seeds – 1/2 tsp

Channa Dal – 1/2 Tsp

Grated Coconut – 3 Tbsn

Turmeric powder – 1/4 tsp

Red chili powder – 1 Tsp

Asafoetida – A generous pinch

Curry Leaves – Few

Oil – 2 Tsp

Salt – As required

METHOD

  • Pressure cook Potatoes 3 or 4 Whistles.
  • Peel the skin and mash it coarsely. Keep It aside.
  • Heat oil in a pan. Crackle mustard seeds.
  • Add Channa dal. When it turns golden, add finely chopped onions and curry leaves.
  • When onion turns golden,add turmeric powder, red chili powder and asafoetida.
  • Add mashed potatoes and saute till the spices are coated well. Keep scraping the bottom as the potatoes would stick.
  • Add required salt and grated coconut.
  • Switch it off.
  • Serve along with rice and your favorite curry.

NOTES

  1. You can pressure cook or  in a pot the potatoes.
  2. Adjust spice according to your taste.
  3. Instead of red chili powder, you can add chopped green chili.

Ingredients
