Diwali is just around the corner. I believe, in every Indian house snacks and sweets preparation will be going on in full swing. For my Non Indian friends, who doesn’t know about this festival, please check out this post. Diwali is a big festival for most of the Indians. All kids and grownups are waiting with equal excitement. Come let’s gear up the for Diwali with this Aval Ladoo / Flattened Rice Ladoo.

What is Aval?

Aval/Poha is also called as Flattened Rice is  a beaten rice which is easily digestible. There are various dishes using Aval all around India.You can check out Aval/Poha Upma and 2 ways Sweet Aval . There is thick and thin variety of Aval. It easily soaks up the liquid,so have to be careful when adding liquid. If not, it becomes soggy. I have used Red Rice Aval here.There is white rice aval too. You can also use that. Aval Ladoo is an easy and quick snack you can make. I have shown you two ways to make these Ladoos with sugar and with Jaggery.

How did I make Aval Ladoo

As I said, I used Red Rice Aval here but you can also use white rice aval variety. The first step starts with roasting the flattened rice flakes. Most of the store varieties don’t have impurities but if it had , then clean Aval before roasting. Just roast it for 2 to 3 minutes. Grind it with sweetener you like , sugar or jaggery. Then add ghee or clarified butter as required to make ladoos. Use your choice of nuts to give the crunch. The ladoos stay good for 3 to 4 days when stored in air tight container in room temperature.

INGREDIENTS

Aval/Flattened Rice Flakes – 1 Cup

Sugar – 2 1/2 Tbsn

Powdered Jaggery – 2 1/2 Tbsn

Cardamom – 1 pod

Ghee – 1/4 Cup (See Notes)

Cahews & Raisins – As Required

METHOD

  • Take a pan and dry roast Aval for 2 to 3 minutes in medium flame. It should be crisp.
  • Take roasted Aval in a blender and blend along with cardamom.
  • Melt the ghee. In 1 tbsn of ghee roast dry fruits to golden.
  • Divide the ground Aval into two portions.

To make Ladoos with Sugar

  • Take one portion of grounded Aval in a blender along sugar and pulse for a second.
  • Remove to a plate. Add one portion of roasted nuts to it.
  • Mix with your hands.
  • Add melted ghee little by little to the aval mixture and try to form ladoos.
  • Serve.

To make Ladoos with Jaggery

  • Take remaining grounded Aval in a blender with Jaggery and pulse for a second.
  • Repeat the same steps as above.
  • Store the ladoos in air tight container in room temperature.

NOTES

  1. You can make ladoos with warm milk if you don’t prefer lot of ghee. If using milk, then finish the ladoos within a day.
  2. Store the ladoos in air tight container in room temperature.
  3. As I used Red Rice Aval, both jaggery and sugar ladoos color looks same. If you use White Aval,the colors will be different.
