Panellets

Panellets are small cakes or cookies in many shapes but mainly round. The main ingredients comprises sweet potatoes and almonds. Actually you need just a handful of ingredients.These cookies were dated at least from 18 th century. These are so easy to make and so addictive. I had to literally stop my daughter and husband to keep munch on these. They are about to finish these the same day I made. So I warn you to save some for yourself before you serve.

How did I make this

I adapted this cookie from this site when I was in search for cookie recipes for Christmas. You need just mashed potato,roasted coconut and ground almonds. Mix it and refrigerate it for 1 hr to 2 days. This is to coconut to absorb the moist of sweet potato. Then roll it and bake it. How easy it is right?

How does it taste

When I saw Coconut in it,I decided to give a try.I was sure it would taste good but when I tasted after baking, it was fabulous. I’m not exaggerating. You will know when you try for yourself. It is crunchy outside, soft and chewy inside.

Flavors in it

I have used vanilla essence in these cookies. But you can also use ground cardamom for another flavor. Actually I’m going to try with cardamom.You can also use Almond extract, Lemon zest.

INGREDIENTS

Sweet Potato Mashed – 1/2 Cup

Almonds – 1/2 Cup ( with or without skin)

Coconut – 1 Cup grated

Organic Raw Sugar – 3/4 Cup + 2 tbsn for rolling cookies

Egg white – from 1 egg

Vanilla essence – 1/2 Tsp

Salt – a pinch

METHOD

  • Toast the grated coconut in a wide pan till light golden. Remove from pan and keep aside.
  • Pulse the almonds coarsely.
  • In a bowl, take all ingredients and mix it to a mass.
  • Cover it and chill in refrigerator for 1 hour to 2 days.
  •  Remove from the refrigerator,scoop in a tablespoon. Roll the top in sugar.
  • Place it in parchment paper laid cookie pan.
  • Bake in a preheated oven at 325 deg F for 25 minutes.
  • The cookies will be crusty outside and soft ,chewy inside.

NOTES

  1. These cookies will not spread like other.
  2. Bake till the bottom of the cookie turns light golden.
  3. You can use almond extract or crushed cardamom or lemon zest in the place of vanilla essence.
  4. The Cookie will be soft when done but turns crunchy after cooled down.
