It’s like we had new year party yesterday but already we past half the month. I see all internet people started making or collecting recipes for Valentine’s day. This time I don’t want to stay behind and here I give you delicious Vegan Chocolate Pudding for you. If your New Year Resolution is healthy eating and you are still following it ( Hats Off to you), then this is the perfect recipe for you and your loved one.

Vegan Chocolate Pudding

This Vegan Chocolate Pudding is one of the best try I made in my Kitchen.My kids and husband loved it,so I can confidently say this recipe is a win. You can confidently make this and impress your loved ones. This is Sugar free and Gelatin free. So you don’t have to worry about the sugar consumption. You can top this Vegan Chocolate Pudding with and Vegan Whipped cream or any nuts of your choices.

How to make Vegan Chocolate Pudding

As I said earlier, there is a secret ingredient in this chocolate pudding. That ingredient is Sweet Potato.Yes, I used Sweet Potato to give pudding a rich creamy texture. The process starts from steaming the sweet potato in electric pressure cooker and mashing it. Then add melted chocolate with mashed sweet potato. Blend it with  immersion blender. Add coconut milk and mix it. Keep refrigerated for at least 1 hour. Serve chilled. Top it with vegan whipped cream or fruits or nuts of your choice.

Ingredients

Sweet Potato – 1 Medium Sized

Chocolate chips – 1 cup

Coconut Oil – 1 Tsp

Coconut Milk – 2 Tbsn

Method

  • Steam sweet potato. I used my Cosori Electric Pressure cooker. I steamed in manual settings for 7 minutes in steamer rack. It was perfectly cooked.
  • Let the pressure release naturally.
  • Peel the skin and mash it in a bowl.
  • Melt the chocolate chips with coconut oil using double boiler method or in microwave.
  • Add the mashed sweet potato to melted chocolate.
  • Blend it using immersion blender.
  • Add coconut milk and mix it.
  • Keep refrigerated for at least 1 hour.
  • Serve chilled.

Notes

  1. If you don’t have immersion blender, you can blend it in your normal blender too.
  2. If you would like more sweetness, you can add honey or sugar.

    This sounds delish! I tried a vegan chocolate mousse once and it used avocado but I wasn’t a fan. I bet the sweet potato would go with the chocolate much better!
