Coconut Milk Panna Cotta with Pomegranate Jelly is a perfect dessert to make for your family get-together, picnic or office potluck. It sets perfectly for you to carry easily while traveling. I haven’t used gelatin or heavy cream in this recipe, which makes it ideal for a vegan diet. This is a light, cool dessert to have on a hot summer day.

Vegan Panna Cotta with Pomegranate Jelly
I love to make easier dessert recipes with minimal ingredients than the elaborate ones that consume lots of time to make. You will agree with me when you check my desserts. This coconut milk panna cotta is also a similar recipe where you need less than 5 ingredients. And also you don’t have to spend a lot of time in the hot kitchen to whip a dessert for your family to enjoy.
I have used agar agar instead of gelatin to make this recipe vegan. Agar agar or china grass as it is commonly called is derived from algae. It has the same purpose as gelatin but as it is derived from plants, it is suitable for vegans. I have used agar agar strands in this recipe. You can use agar agar powder too. The agar agar is available in Asian stores or on Amazon.

How to make Coconut Milk Panna Cotta

Method to make Coconut milk panna cotta
Start with soaking the agar agar strands in a pan with water. If you are using agar agar powder, then you can skip this step. After the strands are soaked in water for 10 minutes, heat up the pan and cook until the agar agar dissolves. Now add the coconut milk and sweetener of your choice and warm it up. After that, pour the mixture into a serving bowl or any bowl to set. Refrigerate the bowl and it will be set in 45 minutes to 1 hour.

Making pomegranate jelly
When the coconut milk panna cotta is setting, start soaking the strands for pomegranate jelly. Once it is soaked for 10 minutes, heat the pan till the agar agar strands dissolve. Then add the fruit juice to it and just warm it up. Do not boil. I didn’t add any sweetener to this jelly as I like to keep the natural sweetness from the fruit. If you like you can add a sweetener of your choice. Once the mixture cools down a little, pour it over the set coconut panna cotta and let it set in the refrigerator for 45 minutes to 1 hour.

Top the panna cotta with toasted coconut shreds or pomegranate arils. Serve it cold.
Just don’t panic and dissolve more agar agar. Add it to the mix.
Add a little less quantity of agar agar if you feel the panna cotta is hard.
I would say you will not have leftovers to store for the next day, lol. But on a serious note, this panna cotta stays good for 2 days when stored in the refrigerator. Later I felt the taste of the coconut milk panna cotta is not as fresh as. So, finish it off in two days.

Coconut milk – ⅛ Cup
Agar agar strands – 1 Tablespoon
Sweetener of your choice – as required
Vanilla extract – ¼ Teaspoon

Pomegranate Juice – ¼ Cup
Agar agar strands – 1 Tablespoon

For coconut milk panna cotta

Notes
- The dessert tastes best when chilled.
- You can skip the sweetener if you want the natural sweetness from coconut milk and fruit. I would suggest adding sweetener to the coconut milk though.
