Gluten free, Vegan Peanut Sundal
This Peanut Sundal/Stir fry is a simple Gluten free, Vegan snack. It's so simple and healthy too.

Servings: 2 people
- 1 cup Peanuts
- 1/2 tsp Mustard seeds
- 1/2 tsp Urad dal
- Curry leaves few
- 2 nos Dry Red Chili Broken
- Rock Salt As required
- 2 tbsn Coconut Grated
- 1 tsp Coconut Oil
Soak peanuts for atleast 4 hours.
Pressure cook peanuts with required salt till cooked or till 3 whistles.
When the pressure is released, open the lid and strain peanuts.
Heat oil in a pan. Crackle mustard seeds.
Add urad dal , dry red chili and curry leaves.
When urad dal turns golden, add cooked peanuts. Stir it.
Add grated coconut. Stir fry till blended.
Switch off and serve.
- If you are fresh peanuts, you can avoid soaking. Directly pressure cook it.
- You can use any oil you prefer.
