This Vegan Magic Cookie Bars is a clever way to use up ripe bananas and graham cookies. This is totally addictive and kids will love it for sure.

4TbsnMelted Butter/ Honey
Chocolate Chips/ butterscotch ChipsAs required
1CupCoconut Shredded/ Desicated
Pre heat oven to 350 Deg F.
Take graham crackers in a food processor and pulse it. Add Melted butter or honey and pulse it to form crumbled texture.
Take a baking tray. You can line it foil or just grease it.
Pour the crumbled graham cookies to the baking tray and press it tight.
Bake this in pre heated oven fro 15 minutes.
After 15 minutes take out the graham layers and let it cool for 15 minutes.
In the mean time, mash the bananas.
Once the graham layers is cooled down, pour the mashed banana over it and spread it even.
Add required chocolate chips. Here I'm not restricting you to use fixed quantity. So go generous (lol).
Top it with roasted Shredded Coconut.Again bake it for 30 minutes.
When done take out from the oven and let it cool.
Once cooled down completely, cut it into squares and serve.Can be refrigerated in air tight container for 2 weeks.
I used normal shredded coconut and roasted it along when I baked the graham layer. You can use desiccated coconut too. If using that, then you can add desiccated coconut directly when baking the bars. Don't have to roast it.
You can use any chocolate chips of your choice.
If you don't want your coconut to get brown, then just bake the bars for 20 - 25 minutes.
