Mixed Vegetable White Kurma

Kurma is an Indian curry with grounded coconut and spices . Kurma can be made with meat or veggies. The meat or veggies are cooked in grounded coconut and mild spices.

Ingredients

  • 2 Cup Mixed Vegetables
  • 1/2 Cup Onions Chopped
  • 2 Nos Green Chili slit lengthwise
  • 1 Bay Leaf
  • 2 Cardamom
  • 1 tsp Oil

To Grind

  • 1/2 Cup Coconut Grated
  • 2 Tbsn Roasted Gram Dal
  • 1 Inch Ginger
  • 2 Cloves Garlic
  • 1/2 Inch Cinnamon Stick
  • 2 Cloves
  • 1/2 tsp Fennel Seeds
  • 1/2 tsp Khas Khas

Instructions

  • Grind all ingredients under the 'To Grind' lists to a fine paste with required water.
  • Heat oil in a pressure cooker pan. Add Bay leaf and cardamom.
  • Add chopped onion and green chili.
  • When onion turns translucent add the chopped vegetables and saute'.
  • Saute' for 2 minutes and add ground coconut paste with required water.
  • Add required salt and closed the lid.
  • Cook till the 3 whistles or until vegetables are cooked.
  • Open the lid when the pressure is gone and mash vegetables lightly.
  • The kurma would be watery but when cools down it becomes thick.
    Serve along with Pulao, roti, chapathi,paratha.

Notes

  1. Add vegetables of your choice.
  2. If you want more spicy, add more green chili.
  3. Adjust water as per the consistency required.
