Vegetable Pulao in Instant pot
This Vegetable Pulao is so easy to put up and the Instant pot makes the job easy for you. As I said earlier, I made this using boiled ponni rice.

Soak rice for 30 mins and drain water. Keep it aside.
Switch on the Instant pot and press the saute button.
Heat oil in the pot. Add bay leaf, cinnamon stick, cloves, and cardamom.
Stir for few seconds and add onions, green chilies. When onions turn translucent add ginger garlic paste.
When the raw smell goes green peas. Stir and cook covered for 2 minutes.
Add drained rice. Stir gently.
Add water and coconut milk. Add required salt. Close the lid and press the rice button.
When done and let the pressure release naturally. Serve along with your favorite gravy.
Notes
You can add cashews and raisins while sauteing onions.
Add vegetables like chopped carrots, corn, beans, potatoes.
You can add only water or change water, coconut milk ratio as per your choice.
