Instructions
Heat oil in a pan. Crackle mustard seeds, add chana dal.
When channa dal turns golden, add onions, curry leaves.
Sauté till onions turn transparent. Add tomato, turmeric powder, red chili powder, pepper powder, and salt.
When the raw smell goes crack open eggs and mixes continuously scrambling the eggs.
When it is done, add coriander leaves and give a mix.
Switch off. Serve warm with any rice variety.

Adjust spice powders according to your preference.
Add a tsp of milk to eggs to make scrambled eggs fluffier.
