Egg Bhurji or Anda Bhurji is an Indian version of scrambled eggs. You can have this at any given time as a side dish with rice or paratha or as a filling inside roti.

What is Egg Bhurji?

Egg Bhurji is the Indian version of Scrambled eggs with loads of onion and tomato. You can have this at any time of the day as a breakfast or as a side dish with rice. Or just fill it in a wrap to make a wholesome lunch box recipe. This dish is so flavorful, protein-rich and healthy. You can customize the spices as per your preference.

How to make Egg Bhurji/ Anda Bhurji

You need basic ingredients and a pan to make this. Heat oil and saute finely chopped onions. Add chopped tomato and spice powders. Then add eggs and scramble it till it is cooked. Garnish with cilantro.

Pro tip – To make more fluffier scrambled egg, beat the eggs separately in a bowl along with a tsp of milk before adding it to the pan.

It can be served along with rice, roti, paratha. Make it a filling in the wrap or it can be a wholesome breakfast choice on busy days. You can also top it on your toast or make a sandwich.

Stepwise recipe to make Indian Scrambled Egg

Ingredients

Eggs – 4

Onion – 1/2 cup finely chopped

Tomato – 1 finely chopped

Turmeric powder – 1/2 tsp

Red chili powder – 1 tsp

Pepper powder – 1/2 tsp

Salt – as required

Curry leaves – few

Coriander leaves – few

Mustard seeds – 1/2 tsp

Chana dal – 1 tsp

Oil – 1 tsp

Method

  • Heat oil in a pan. Crackle mustard seeds, and add chana dal.
  • When channa dal turns golden, add onions, and curry leaves.
  • Sauté till onions turn transparent. Add tomato, turmeric powder, red chili powder, pepper powder, and salt.
  • When the raw smell goes crack open eggs and mix continuously scrambling the eggs.
  • When it is done, add coriander leaves and give a mix.
  • Switch off. Serve warm with any rice variety.

Notes

  • Adjust spice powders according to your preference.
  • Add a tsp of milk to eggs to make scrambled eggs fluffier.

    Hello! I made this delicious recipe but without the chana dal. Is this a dried split chickpea? If so I don’t understand how to add a teaspoon of something to a sauté that is still dried. Or are you adding it after it has previously been cooked? Please clarify.

      Yes, it is dried split chickpea. You can just add it directly to oil while sautéing till it turn golden brown. Need not to be precooked. If not you can avoid it. Still the dish taste same. Thank you for trying the recipe.

    I love scrambled eggs and quite often have them for lunch or breakfast at the weekends. But I have never tried egg bhurji. It looks and sounds like a really delicious way to serve eggs. Definitely want to try this recipe.

    I had never heard of Chana Dal before today. I had to look it up in English it is Baby Chickpeas. I love those. Makes me want to try this recipe even more. Thank you for teaching me something new.

    I bet these eggy delights must be a wonderful treat to all egg lovers! even though we dont eat eggs i can identify with the dishes well! A quick breakie to make in the morning rush, as someone suggested these would be a great stuffing in wraps and rolls!!!! wonderful recipe dear!
