What is Egg Bhurji?

Egg Bhurji is the Indian version of Scrambled eggs with loads of onion and tomato. You can have this at any time of the day as a breakfast or as a side dish with rice. Or just fill it in a wrap to make a wholesome lunch box recipe. This dish is so flavorful, protein-rich and healthy. You can customize the spices as per your preference.

How to make Egg Bhurji/ Anda Bhurji

You need basic ingredients and a pan to make this. Heat oil and saute finely chopped onions. Add chopped tomato and spice powders. Then add eggs and scramble it till it is cooked. Garnish with cilantro.

Pro tip – To make more fluffier scrambled egg, beat the eggs separately in a bowl along with a tsp of milk before adding it to the pan.

Stepwise recipe to make Indian Scrambled Egg

Ingredients

Eggs – 4

Onion – 1/2 cup finely chopped

Tomato – 1 finely chopped

Turmeric powder – 1/2 tsp

Red chili powder – 1 tsp

Pepper powder – 1/2 tsp

Salt – as required

Curry leaves – few

Coriander leaves – few

Mustard seeds – 1/2 tsp

Chana dal – 1 tsp

Oil – 1 tsp

Method

  • Heat oil in a pan. Crackle mustard seeds, and add chana dal.
  • When channa dal turns golden, add onions, and curry leaves.
  • Sauté till onions turn transparent. Add tomato, turmeric powder, red chili powder, pepper powder, and salt.
  • When the raw smell goes crack open eggs and mix continuously scrambling the eggs.
  • When it is done, add coriander leaves and give a mix.
  • Switch off. Serve warm with any rice variety.

  • Adjust spice powders according to your preference.

  1. Such an easy and perfect recipe for egg lovers. We don’t eat eggs , but me very sure it’s a perfect side dish to serve with Roti or paratha .

  2. We never ate the egg, so I thinking of making this recipe using soya chunks or tofu. looks neat and delicious.

  3. Me and boys love egg and I know only to make boiled egg. This recipe sounds very simple and I will try this for sure. This will be a great breakfast for me.

  4. Egg bhurji is our all time favorite dish at my home. When we have not in mood to eat veggies, made something light and delicious that’s egg burji. Though we never use mustard seed and kadi patta for tempering, it sounds so good.

  5. Really don’t know why but till now have not tried making masaledar scrambled eggs or bhurji. Looks so delicious and different with the lentil and curry leaves flavors. Yummy way to begin the day.
