Veg Cutlet is a popular Indian Snack and it has a special place in almost all Indian restaurant menus. Let’s see how to make this snack right in our kitchen.

What is Veg Cutlet?
Veg Cutlet or Vegetable Cutlet is a pan-fried vegetable patty. It is usually had as a snack along with green chutney or imli chutney or simple tomato ketchup. This is best had with a hot cup of chai. I have been making these cutlets for a long time but never made it to my blog.

How to make Veg Cutlet
The process of making cutlets starts with cooking the stuffing. First, boil the potatoes and cook the potatoes with onion and other vegetables along with the spice powders. Once it cools down make it in any shape of your preference like a circle, heart-shaped or oblong. Dip it in egg wash and then in the bread crumbs. Then shallow fry it in the pan till both sides become golden and crispy. Serve warm with ketchup.

Potato
Green peas
Carrots
Onion
Cumin seeds
Red chili powder
Garam masala
Turmeric powder

Veg Cutlets in the Air fryer
You can make these cutlets in the air fryer too. Preheat the air fryer to 350 Deg. Brush the patties with oil after breading and cook in the air fryer for 15 minutes. Do not forget to flip the patties in between.
Veg Cutlets in Oven
Preheat the oven to 350 Deg F. Lay the breaded cutlets in a baking tray and bake for 15 to 20 minutes. Check after 15 minutes, so it will not get burned.

Can I freeze Veg Cutlets?
Yes, you can freeze the cutlets. After breading, place it in a baking tray or plate and freeze well. Once it is frozen, place those cutlets in a ziplock bag and freeze for 3 months. When needed you can directly pan fry or air fry or bake from the freezer. No need to thaw it.
Can I skip the egg
Yes. Instead of egg you can mix 2 Tbsp of all-purpose flour in ¼ cup of water and dip the patties in it and then in bread crumbs.

Recipe to make Veg Cutlet
Ingredients
Potato – 4 (boiled and mashed)
Peas – ¼ Cup
Carrot – ¼ Cup chopped
Onion – ½ Cup chopped
Ginger garlic paste – ½ Tsp
Turmeric powder – ¼ Tsp
Red Chili powder – 1 Tsp
Cumin powder – ½ Tsp
Garam Masala – ½ Tsp
Salt – As required
Oil – 1 Tsp
Cumin seeds – ½ Tsp
Cilantro – few
Egg – 1
Breadcrumbs – as required
Oil – As required for shallow fry
Method
- Heat oil in a wide pan and add cumin seeds.
- Add chopped onions. Saute for a minute.
- When the onion turns translucent, add ginger garlic paste.
- When the raw smell goes, add the spice powders.
- Mix and add green peas and chopped carrots.
- Cover and cook for 5 minutes.
- Then add boiled and mashed potatoes
- Add the required salt and mix thoroughly.
- Blend the potatoes nicely using the backside of the ladle.
- Add chopped cilantro and switch off.
- When the mix cools down, take a small portion and make patties of any shape ( circle or heart or oblong)
- Beat an egg in a bowl.
- Dip the patties in the egg and then in the bread crumbs.
- Heat a pan and oil.
- Place the breaded patties and cook on medium flame till it turns golden. Then flip it and cook.
- Serve warm with ketchup or any chutney.
To air-fry
- Preheat the air fryer to 350 Deg.
- Brush the patties with oil after breading and cook in the air fryer for 15 minutes.
- Do not forget to flip the patties in between.
To bake in the oven
- Preheat the oven to 350 Deg F.
- Lay the breaded cutlets in a baking tray and bake for 15 to 20 minutes.
- Check after 15 minutes, so it will not get burned.

- Adjust the spice powders as per your spice preference.

Hi Lathiya, I’d love to make these but I have to make them without eggs, because my grandson is allergic. I’m going to try them with flax seed (“flax egg”) and hope to let you know how they turn out.
I have also given the substitute for egg in the post. If he is ok with all purpose flour, you can make a slurry out of it and use instead of egg. You can also try flax seeds egg as you said. Looking forward to hear your feedback. Thank you.
