Whole Wheat Jalebi
I have recently joined a FB group Shhhhh Cooking Secretly Challenge . It’s an interesting group where you will be paired with other fellow blogger. You both assign two ingredients for each other which other members in the group doesn’t know. Once you made the dish, others should try to identify the ingredients. How interesting is this ,right?
I’m paired with talented blogger Amritha Iyer of Foodsamaritan. She gave me two ingredients Besan ( chickpea flour) and Cardamom using which I have to make a Madhya Pradesh dish. As I was researching about the Madhya Pradesh Cuisine, I came to know that Poha and Jalebi is one of the main combination they have. Jalebi is basically made by grounding Urad dal or using All purpose flour. But I bumped into this site to see how Jalebi is made with All purpose flour and Besan. I instantly jumped with joy as I haven’t tried Jalebi before and so excited to make.
How did I make it
Jalebi can be called as Indian version of Funnel Cakes we get in US. It is orange, swirl juicy sweet that will be made during special occasions. The original recipe used All purpose flour and besan but I used Whole Wheat flour instead of All purpose flour. Mix the flour and yogurt. Leave for 24 hrs for fermentation. Deep fry and coat in sugar syrup. The end result is crispy , juicy Whole Wheat Jalebi. Hope you will try this.

INGREDIENTS
Whole Wheat Flour – 1 Cup
Besan ( Chickpea Flour) – 1/4 Cup
Yogurt – 1/4 Cup
Turmeric Powder – 1 pinch
Ghee / Clarified Butter – 2 Tbsn
Warm Water – 1 1/2 Cup ( approximately)
Oil – to deep fry
For Sugar Syrup
Sugar – 1 Cup
Water – 1 Cup
Cardamom – 1 Crushed
Lemon Juice – few drops
METHOD
- Check this post to make sugar syrup. Add crushed Cardamom to the sugar syrup. Keep aside.
- In a bowl ,mix the flours, yogurt,turmeric powder, ghee.
- Add warm water slowly to the mixture and make thick and smooth batter. Close and let it stay in room temperature overnight.
- Heat oil in a deep pan.
- Mix the batter and pour it in a ziplock. Cut the tip . Pour the batter in hot oil as swirl.
- Cook in medium flame till golden.
- Remove from oil and dip it in sugar syrup.
- Serve warm.
NOTES
- You can use piping bag or any squeeze bottle to pipe the Jalebis.
- The batter should be smooth and thick.
- You can use yellow food color instead of turmeric powder or you can avoid the color.
- The given quantity makes almost 20 Jalebis. It depends on the size of Jalebis.
