Paruppu Vada / Chana Dal Fritter is a famous South Indian tea-time snack. Here I show you how to make these in a healthy version using an Airfryer. The chana dal fritter is a protein-rich, vegan, and gluten-free snack you can have any given day. I love to have these vada with a hot cup of tea.
Air Fried Paruppu Vada
When I received the Air Fryer, the first thing I wanted to try was Parippu Vada/ Chana Dal Fritter as it is one of my favorite snacks. But haven’t made it for a long time as my husband was not fond of deep-fried ones. So I made Paruppu vada this time with not more than 1 Tsp of oil. So my husband is happy and me happy. One thing with Air Fried Paruppu Vada is, that you can’t expect it as the same as a deep-fried one. But I would definitely say, it’s crispy.
How to make paruppu vada in an Air fryer
The first step in making Paruppu Vada is soaking the Dal. Soak Chana dal for 1 – 2 hours. Then grind it with ginger and green chili with no water. Do not grind smoothly. Few dals should be visible. Add other ingredients and air fry to the preheated air fryer. I brushed the vadas before air frying.
What I understood is preheating an Air fryer helps the dish cook crisper. So preheat for 2 minutes. I cooked Paruppu vada at 400 Deg F for 15 minutes flipping the vadas twice in between. You don’t have to babysit as you do in deep frying. When it’s done you can hear the click sound of the timer. Healthy air-fried vadas are done.

Paruppu vada recipe with step-wise pictures
Ingredients
Onions – 1/4 Cup Finely chopped
Coriander leaves/ Cilantro – As Required Chopped
Fennel seeds – 1/4 teaspoon
Salt – as required
Oil – 1 tsp to brush
To Grind Coarsely
Chana Dal/ Kadala Parupu – 1/2 Cup Soaked for 1 -2 hrs
Green Chili – 2
Ginger – 1/4 inch piece
Method
- Grind all the ingredients under ‘To grind’ coarsely without water. Few dals can be visible.
- Remove it to a bowl.
- Add other ingredients except for oil to the ground dal.
- Mix it with your hands. Take a small lime-sized portion and flatten it slightly in your palm. Transfer it to the plate.
- Repeat with the remaining dal mixture. Brush all the vadas with oil.
- Set the air fryer for 400 Deg F. Preheat for 2 minutes.
- Arrange the vadas in the air fryer basket. Do not crowd the basket. Leave little space between the vadas for air circulation. Mine did occupy 5 vadas in one batch. ( Depends on the size of the vadas)
- Slide the basket into the Air fryer and set the time to 15 minutes. Flip the vadas twice to get it cooked crisp.
- Once the timer ends, remove vadas from the basket. So it doesn’t get overcooked.
- Repeat till you are done with all vadas. Serve warm with your favorite chutney.
NOTES
- The given quantity of ingredients is sufficient to make 8 – 10 vadas depending on the size.
- I found that pre-heating the air fryer helps to cook the dish crisp.
- The vada stayed crisp for more than 5 -6 hours as I made these in the afternoon and my husband had it in the evening.
- Adjust spice by adding or reducing green chili.
- Do not expect the deep-fried result in air-fried dishes.
