Raw Mango Cooler, also known as Aam Panna, is a refreshing summer drink made from unripe mangoes. Its tangy, slightly sweet, and earthy flavor makes it perfect for beating the heat. It is popular for its cooling and hydrating properties.

This is an easy recipe with a few ingredients. As we are adding ginger, this aids in digestion too. It is often flavored with mint, black salt, and jaggery or sugar to enhance its taste. It tastes best when served chilled.

What is black salt?
One of the key ingredients in this recipe is black salt or kala namak. In the rock salt form, it will be dark grey, but when powdered, it looks pink. It has a tangy and pungent taste, which adds an earthy flavor to the dish when it is added.
You can get black salt in Asian/Indian stores or on Amazon. If you can’t get black salt, please feel free to add Himalayan pink salt. Normal salt will also work but to get the earthy flavor in the drink, I highly recommend black salt or pink salt.

Method
Take the raw mango chunks, ginger, and sugar in a blender. Blend it with the required water to make it smooth paste. Strain it in a bowl. Add black salt and the required soda. Serve the drink chilled.

| Variations you can try 1. You can add a piece of green chili and a few mint leaves along with raw mango chunks while you blend. 2. To make this drink healthier, you can add coconut water instead of soda. 3. To make it more fun, you can pour this raw mango cooler into popsicle moulds and serve it as popsicles. |
| Note: Usually, Aam Panna recipe has green chili and mint leaves added, but as I was making this drink for my kids, I didn’t use them. |

- 1 Inch Ginger
- 1 Tablespoon Sugar
- 1/8 teaspoon Black salt
- Water As required
- 1/2 Cup Soda
Instructions
- Take the raw mango chunks, ginger, and sugar in a blender.
- Blend it with the required water to make it smooth paste. Strain it in a bowl.
- Add black salt and the required soda. Serve the drink chilled.
Notes
- I added soda, but you can add coconut water to make it healthier.
- Add the required water to blend the ingredients smoothly and strain them.
- Once you strain the raw mango puree, you can store the concentrate in the refrigerator for a week. Just add soda as you require before serving.
- If you can’t get black salt, you can use Himalayan pink salt or normal salt.
