Have you heard about Kale Brownies? Yes, Kale brownies. Indulging in decadent desserts while still gaining the benefits of nutritious ingredients might sound too good to be true. Harnessing the natural goodness of kale, these brownies defy expectations and introduce a novel way to enjoy both the richness of chocolate and the nourishment of greens.
Kale Brownies
These kale brownies were the result of my husband’s mistake. You want to know what. My husband got Kale instead of spinach in the grocery shopping. I know that Kale has lots of benefits but I haven’t cooked it before and not sure whether my family likes its taste. So was searching for an interesting recipe that my family would love. Then I bumped into this recipe.
I loved it because of its simplicity of ingredients and gave it a try. It was an instant hit in our family. I modified little things from the original recipe. My son commented, “Mom, the brownies smell great even in the oven.” How nice is it to get a comment like this from your little picky eater? He is the one who doesn’t eat anything in green color in his food. But he devoured this Kale Brownie. That is a win-win situation for both me and my kids. My daughter often asks me to make this for her snack. So now you know why you should bake these Kale Brownies.

Health Benefits of Kale
Kale is called as King of all healthy greens. Kale belongs to the cabbage family. They have very little calories and fat. The large portion of the fat in it is the most beneficial Omega 3 Fatty Acids. They are rich in Antioxidants and excellent sources of vitamin C and vitamin K. They also have anti-cancer properties. It also helps in your weight loss. So definitely include this super veggie in your diet at least once a week.
How to make Kale Brownies
As I said I adapted this recipe and made changes to the original recipe. I used Whole Wheat Flour in place of all-purpose flour. I also used 50-50 granulated sugar and Jaggery. The first step starts with melting chocolate chips with butter. When it’s cooling down steam the cleaned Kale leaves and puree it. Beat eggs and sugar+Jaggery, then add the dry ingredients. Mix the melted chocolate and pureed Kale. It looks so glossy and I loved that. Once you start bake the brownie in the oven, your house will smell heavenly and you will say the same dialogue as my son. I used my favorite Brownie Pan to bake this.
Can I use any other greens?
Yes, You can use Spinach in the place of Kale. Be innovative in trying new combinations.

Kale Brownie recipe
INGREDIENTS
Whole Wheat Flour – 1 1/4 Cups
Cocoa Powder / Any Chocolate Drink powder – 2 Tbsp
Granulated Sugar – 1 Cup
Powdered Jaggery – 1 cup
Kale Puree – 1 Cup ( See Notes)
Eggs – 4 Nos
Butter – 1 Cup
Chocolate Chips – 2 Cups ( I used Semisweet Chocolate Chips and Butterscotch Chips)
Vanilla Essence – 1 Tsp
Salt – a pinch
METHOD
- Preheat the oven to 350 Deg F. Grease your brownie pan and keep aside.
- In a bowl, mix flour, cocoa powder and salt.
- Melt the chocolate chips and butter in a double boiler method or in the microwave. Check this post to see how to melt chocolate in the double boiler method.
- When it comes to room temperature, add eggs, sugar, vanilla essence, and kale puree. Mix thoroughly.
- Gently add the flour mixture and mix till the flour is just mixed. Do not over-mix.
- Pour the batter into the prepared brownie pan. Bake in the pre-heated oven for 35 minutes or the inserted toothpick comes out clean.
- Let it come to room temperature before cutting it into pieces.
- Serve warm with your favorite ice cream or pack it in your kids’ snack box. They will get one more reason to love you.











NOTES
- To make Kale puree, clean a big bunch of kale leaves. Remove the thick stalk. Steam the leaves for 5 minutes. Puree it in a food processor or blender.
- You can use all granulated sugar or all Jaggery/ brown sugar if you like.
