Stained Glass cookies

This valentine’s day I decided to make stained glass cookies as that was in my to-do list for a long time. I thought this is the perfect timing. I had only heart-shaped cookie cutters available at the moment. Blame moving several houses and I lost few cookie cutters I had and never bothered to buy new ones too.

The name of the cookies may sound fancy but no ingredients in these cookies are fancy. It’s so easy to make. Even I was skeptical before I tried this cookie. I’m sure you will say the same once you tried it. The process is so much fun and it awakens your inner child.

Ingredients to make Stained Glass Cookies recipe

All-Purpose flour

Egg

Butter

Sugar

Vanilla Extract

Hard candy like Jolly Rancher, Lollies

How to make Stained Glass cookies

You need a good hand blender to ease your handwork. Then make sure all ingredients are at room temperature. Beat softened butter and sugar in high for two minutes. Then add an egg. Set the beater to low and beat for a minute. Add vanilla extract and start adding the flour slowly while beating at low speed till all the flour blended.

Place the dough in a flour-dusted board or countertop and bring it to one mass with your hands. Make it rectangular and cover it with a cling sheet. Refrigerate this dough for at least 1 hour to 1 day. After an hour, remove the dough from the refrigerator and place it on the board. Divide the dough into half. Cover one half of the dough and place it in the refrigerator again.

How to roll Cookies?

 Roll the other half to ½ inch thickness. Use 4-inch heart-shaped cookie cutter to cut the cookies out of the rolled dough. Place these cut out cookies in the parchment paper laid baking tray. Then use your 2-inch heart-shaped cookie cutter and cut out the middle part. Place this tray in the refrigerator for 10 minutes. In the meantime, preheat the oven to 350 deg F. Crush your hard candies using your rolling pin. I used hard lollies to make stained glass.

Take the tray out of the refrigerator and fill half of the middle part of each cookie with crushed hard candies. Make sure not to overfill. Then bake in preheated oven for 10 to 12 minutes. When it is done, let it stay in the tray for a minute and then move to a cooling rack. You can store the cookies in the refrigerator for two days. I’m sure it will not last long from those little sneaky hands.

Can I freeze the Cookies?

Yes, you can freeze the cookie dough for 3 months. Place it in the refrigerator before the day you plan to bake the cookies.

Recipe for Stained Glass cookies

Ingredients
