No Fail Mango Yogurt Parfait with failed muffins…Mmmm from the name you would have guessed that I had failed in baking a muffin. But that doesn’t stop me from making another yummy dessert..haha.

That is a long story. Don’t worry I will not bore you. At first, I tried Rose milk syrup to make homemade Rose milk. Actually, that was a hit. everyone liked it. When I made the Rose milk syrup, I thought of making some other dish using the Rose syrup. I decided to make muffins with Rose flavor. I came up with my own recipe but made a blunder (I have to figure out what). Everything was fine, the aroma, the taste but the muffins didn’t raise. And it was so soft that it crumbled and didn’t come out in shape. When I tasted it, it tasted good and I didn’t want to waste it. So I zip-locked and froze thinking that I could use that for something else. After long thinking, I came up with the idea of making parfait. How cool is it?

How to make mango yogurt parfait

By this time you should have known my love of mangoes. As I had Mangoes in hand, I made mango-flavored yogurt to make this. This tasted great when served chilled and topped with some fresh-cut mangoes. I was skeptical when I gave this to my husband. But I’m glad that he loved it. The rose-flavored muffins paired well with mango-flavored yogurt.

Next time when you have some failed cake or cupcake or muffins which doesn’t have major issues, instead of tossing it out think about making it creatively. You can also use leftover cakes to make this. I believe any flavor cake should go well. I believe you will give this a try. Don’t forget to let me know.

No Fail Mango Yogurt Parfait

Mango yogurt parfait recipe

INGREDIENTS

Mango Puree – 1/2 cup

Thick Yogurt – 1/2 cup

Sugar – 1/3 cup

Crumbled muffins – 1/4 cup for each serving

Chopped Mangoes – for topping ( optional)

METHOD

  • Take yogurt and sugar in a bowl. Using an electric mixer or whisk, beat it until creamy and the sugar dissolves.
  • In the creamy yogurt mixer, add mango puree and mix thoroughly.

SETTING THE PARFAIT

  • Take two glasses that you decide to serve.
  • Add muffin crumb pieces.
  • Layer with two spoons of mango yogurt.
  • Again, add a crumb layer and then a mango yogurt layer.
  • Top it with chopped mangoes.
  • Chill it for 2 to 4 hours.
  • Serve.

NOTES

  1. You can use chopped nuts for topping, too.
  2. Don’t limit your imagination in innovating this dish.
  3. Adjust the sugar as per the sweetness of the mango.
