Vegan Chocolate Pudding
This vegan chocolate pudding is one of the best tries I made. My kids and husband loved it, so I can confidently say this recipe is a win. You can impress your family with this comparatively healthy pudding. I haven’t added gelatin or extra sugar other than the chocolate chips. You can top this vegan chocolate pudding with whipped cream or any nuts you choose.
How to make Vegan Chocolate Pudding
As I said earlier, there is a secret ingredient in this chocolate pudding. That ingredient is sweet potato. Yes, I used a sweet potato to give the pudding a rich creamy texture. The process starts with Instant pot sweet potatoes and mash them. Then add melted chocolate with mashed sweet potato. Blend it with an immersion blender. Add coconut milk and mix it. Keep refrigerated for at least 1 hour. Serve chilled. Top it with vegan whipped cream or fruits or nuts of your choice.

Ingredients
Sweet Potato – 1 Medium Sized
Chocolate chips – 1 cup
Coconut Oil – 1 Tsp
Coconut Milk – 2 Tbsp
Method
- Switch on the Instant Pot. Place the steamer rack and pour 1 cup of water.
- Scrub and wash the sweet potato.
- You can poke it with a fork three to four times if you like. I didn’t do that.
- Place the sweet potato in the steamer rack. Close the lid and check the vent is sealed.
- Press the manual button and set the cook time to 15 minutes on high pressure.
- The cook time may vary depending on the size of the sweet potato, from 30 minutes for medium-sized to 60 minutes for large ones.
- Let the pressure release naturally.
- Peel the skin and mash it in a bowl.
- Melt the chocolate chips with coconut oil using a double boiler method or in the microwave.
- Add the mashed sweet potato to the melted chocolate.
- Blend it using an immersion blender.
- Add coconut milk and mix it.
- Keep refrigerated for at least 1 hour.
- Serve chilled.

- If you don’t have an immersion blender, you can blend it in your normal blender too.
- If you would like more sweetness, you can add honey or sugar.

Is the coconut milk integral to the recipe or could I substitute something else?
You could replace coconut milk with almond or whole milk. I used it as I like it’s flavor.
