This is a creamy, luscious dessert made with no fuss, no special equipment, no rocket science. Once you know how to make it, you will never stop making this Steamed Caramel Custard.

Caramel Custard

Caramel Custard /Pudding is a creamy, custard dessert with a soft caramel top. It’s made all over the world in various methods, Eggless, using custard powder, baked, steaming, etc. It’s an easy and versatile dessert that can be a crowd-pleaser at any party or get-together. Kids will love this as adults.

How to make Steamed Caramel Custard

I made this Pudding using the steaming method. I made this in our normal idli pot. You can also steam this in a pressure cooker.

Making Caramel

The first step starts with making the caramel which should be done carefully. Make caramel in the steel pot which you choose to make this dessert. That way, it will be easy for you to act fast before the caramel gets hardened.

Making Custard

Then start preparing the custard. Custard is nothing but an egg and milk mixture. Steam it till cooked. Chill before you serve. Enjoy the creamy caramel custard.

Beat egg and Sugar
Add Vanilla Extract

Steamed Caramel Custard recipe

INGREDIENTS

For Custard

Whole milk – 1 cup

Egg – 2

Organic Sugar – 1/2 cup

Vanilla Essence – 1/2 tsp

For Caramel

Organic Sugar – 1/3 cup

Water – 2 tsp

METHOD

  • Start with making the caramel. For making the caramel, take the steel pot you choose to make this dessert.
  • Take sugar and water in the pot. Heat it in medium flame till the sugar melts.
  • Swirl the pot occasionally. Don’t use a spoon and stir. The sugar crystallizes by doing this. ( from personal experience)
  • When sugar is completely dissolved it starts turning golden. Keep swirling it in heat till the color becomes golden brown.
  • Remove from heat and swirl the caramel around inside the pot. Do this step fast. Else the caramel hardens.
  • Start heating the idli pot with the required water.
  • In another bowl, make the custard by beating eggs and sugar.
  • When the sugar dissolves, add milk and vanilla essence. Mix well.
  • Pour this custard mixture into the pot with caramel. You can also strain the custard mixture before pouring.
  • Cover the pot with foil and poke a few holes with a toothpick.
  • Place this pot inside the Idli pot and cover it.
  • Steam till cooked.
  • When you insert a toothpick into the pudding, it should come out clean.
  • When it cools down,de-mold on a plate.
  • Chill it in the refrigerator for at least 2 hours.
  • Serve chilled.

NOTES

  1. You can strain the custard before pouring it into the caramel. I didn’t strain.
  2. Adjust the sugar as per your requirements. The above-mentioned sugar was perfect for us.
  3. Use whole milk for a creamy texture.

  • Place this pot inside Idli pot and cover it.
    Steam till cooked.
  • When you insert a tooth pick in pudding, it should come out clean.
  • When it cools down,de mold in a plate.
  • Chill it in refrigerator for at least 2 hours.
    Serve chilled.

Notes
