This Pineapple Madhura Curry is a dish from Kerala that is a must on special occasions. It is so easy to prepare and require only minimal ingredients. The main ingredient is pineapple, obvious from the name. This curry has a sweet and sour taste which is unique about this dish. This goes well with rice.
I have prepared this curry for this Onam. Though I posted this a little late, you can try this any day. You will love this if you love pineapple.
How to make Pineapple Madhura curry
As I said, pineapple is the main ingredient. It is cooked in ground coconut paste. The coconut is ground along with a few spices and green chili. While tempering, try to use coconut oil to get an authentic taste and aroma. Instead of sugar, you can add a piece of jaggery.

Pineapple madhura curry recipe
INGREDIENTS
Pineapple Chunks – 1 cup
Turmeric powder – 1/4 tsp
Salt – as required
Sugar/ Jaggery – 1/4 tsp
To grind
Coconut – 1/4 cup grated
Jeera seeds – 1/2 tsp
Green chili – 2 nos
Ginger – 1/2 inch piece
Mustard seeds – 1/8 tsp
To temper
Coconut oil – 1 tsp
Mustard seeds – 1/4 tsp
Dry red Chili – 1 or 2
Curry leaves – few
METHOD
- Grind all ingredients under ‘ to grind’ to a smooth paste with the required water.
- In a pot, take pineapple chunks along with water till the pineapple is immersed.
- Add turmeric powder and cook till the pineapple is cooked.
- Mash pineapple slightly with the ladle.
- Add the ground coconut paste and cook till the raw smell goes.
- Add sugar and required salt.
- When it reaches a thick consistency, remove it from the flame.
- Heat coconut oil in a pan.
- When it is hot, crackle mustard seeds.
- Add dry red chili and curry leaves.
- Pour it into the curry.
- Let the curry rest for a few 10 – 15 minutes before serving for the flavors to blend.
- Serve along with rice.
NOTES
- Adjust green chilies according to your requirements.
- If your pineapple is very sweet, you can avoid adding sugar or jaggery.

- 1-2 nos Dry red chili
- Curry leaves few
