This Peanut Sundal/Stir fry is a simple, protein-rich, vegan snack. It’s so simple and healthy too. You need less than 30 minutes if you remove the soaking time.
Peanut Sundal – Navarathri Special
Navarathri is a Hindu festival celebrated all over India under various names. It is usually celebrated for nine days. During these days people will be fasting the whole day. They take fruits and after sunset will have dishes made with no onion and garlic. Peanut Sundal is also one of the dishes made during fasting. It’s protein-rich and helps to gain energy.
How to make Peanut Sundal
Making of this is so simple. The only time-consuming process is to soak peanuts. If you are using fresh peanuts, you can avoid the soaking step too. Pressure cook the peanuts with the required sea salt. Strain it and stir fry. A delicious and healthy snack is ready to munch on.

Peanut sundal recipe
INGREDIENTS
Peanut – 1 cup
Mustard seeds – 1/2 tsp
Urad dal – 1/2 tsp
Curry leaves – few
Dry red Chili – 2 nos broken
Rock Salt – as required
Coconut – 2 tbsp grated
Coconut oil – 1 tbsp
METHOD
- Soak peanuts for at least 4 hours.
- Pressure cook peanuts with the required salt till cooked or till 3 whistles.
- When the pressure is released, open the lid and strain the peanuts.
- Heat oil in a pan. Crackle mustard seeds.
- Add urad dal, dry red chili, and curry leaves.
- When urad dal turns golden, add cooked peanuts. Stir it.
- Add grated coconut. Stir fry till blended.
- Switch off and serve.
NOTES
- If you are fresh peanuts, you can avoid soaking. Directly pressure cook it.
- You can use any oil you prefer.





Gluten free, Vegan Peanut Sundal
Ingredients
- 1 cup Peanuts
- 1/2 tsp Mustard seeds
- 1/2 tsp Urad dal

- 2 tbsn Coconut Grated
- 1 tsp Coconut Oil
