Jackfruit is a popular fruit native to Southwest India. The fresh ripe jackfruits are eaten as such mostly. It is also used to make desserts like Chakka varattiyathu, halwa, or pradhaman. The unripe one is added to curry, stir-fries. The jackfruit is used as vegan meat nowadays.

Apart from the flesh, the seeds of the jackfruit are also consumed. The outer skin is removed, and the seeds are steamed or cooked. You can eat it as such, or you can make stir-fry with the cooked seeds.
How to cook Jackfruit seeds in an Instant Pot
I like to cook the jackfruit seeds in the Instant Pot. It gets cooked perfectly every time. First, peel the white outer skin of the seeds. Wash the seeds thoroughly in water. Switch on the Instant Pot. Pour 1 cup of water into the Instant Pot stainless steel pot and place the trivet inside.

Now, place the bowl with the seeds inside the stainless steel pot. Close the lid. Check if the valve is in the closed position. Press the pressure cook button and set the timer for 25 minutes. Once it is done, let the pressure release naturally. Open the lid and remove the bowl. Use this to make stir fry or have it as such as a snack.
How to cook Jackfruit seeds on stovetop
After peeling the skin, take the seeds in a bowl and fill it with water till the seeds are covered. Add a little salt. Cook it in medium flame till the seeds are cooked soft.

When it splutters, add chopped onion and curry leaves. After the onion turns translucent, add the red chili powder and turmeric powder. Saute it for a minute and add the chopped jackfruit seeds. Add required salt. Let the spice powders nicely coat the seeds. Cook for 2 to 3 minutes. Add the grated coconut and switch off the flame. Serve with rice.
