Today, Let’s travel to Manipur, a Northeastern state of India. Their Cuisine is similar to South East/ Central East/ Polynesia. We are going to see Alu Kangmet, a simple potato dish.

Manipur Cuisine

Manipur Cuisine mainly uses rice, fish, and leafy vegetables. The taste is different from other regions of India as they use various aromatic herbs and roots particular to that region.

So you would be thinking why Manipuri suddenly? It’s because this month’s challenge from our FB group Shhhh Cooking Secretly Challenge is cuisine from Manipur. Otherwise, I wouldn’t have been trying. Glad I’m part of this group as I’m challenging myself to try different cuisines. I have talked about this group and how it works in this post. Alu Kangmet

This dish needs just 4 basic ingredients. Alu Kangmet is a potato dish made with mashed potato. Alu /Aloo means Potato. When I tried it for the first time, was doubtful about its taste. But it tasted great with rice.

Let the name not confuse you. Simply this dish is a mashed potato sauteed with red chili. This is usually served with Manipur-style Puri. I served with rice. Potato Podimas is a similar type of side dish you can try.

How to make Alu Kangmet

Making this dish is so easy and can be made in a jiffy. Boil and mash potatoes. Saute in oil with crushed dry red chilies and salt. That’s it. So easy right? But don’t suspect the taste. Do try for yourself and thank me later.

Alu Kangmet recipe

Ingredients

Potato – 2 Medium Sized

Dry Red Chili flakes – 2 tsp

Salt – As required

Vegetable oil – 1 tsp

Method

  • Boil and mash potatoes. Keep aside.
  • Heat oil in a pan. Add mashed potato, red chili flakes, and salt.
  • Stir well.
  • Serve as a side dish.

Notes

  1. In the original recipe, they roasted whole dry red chili and crushed it to use. I used red chili flakes.
  2. Adjust dry red chili as per your requirement.
