Mango Sago—an Asian dessert that combines sweet ripe mangoes, chewy tapioca pearls (sago), and milk. If you’re looking for a light, refreshing dessert in summer, Mango Sago is a must-try! It is a gluten-free dessert you can customize as per your preference. You can easily make this dessert vegan.

It is known for its refreshing, tropical flavors and creamy texture. Whether you’re new to Asian desserts or a longtime fan, this Mango Sago recipe is a delicious way to bring a taste of the tropics into your kitchen. There are several versions of making mango sago, and this is my version. I felt this was easier.

How to make Mango Sago

Mango sago recipe with step-by-step instructions

Start the process by soaking sago/tapioca pearls. I soak it for 30 minutes before cooking. Take 2 cups of water in a saucepan. Let it boil and add the washed and soaked sago. Cook until it turns transparent. Strain it in a fine mesh colander and wash it under running cold water. So that it stops overcooking and sticking together. 

Take a bowl. Add the cooked sago pearls, mango puree, boiled and chilled milk, sweetened condensed milk, mango jelly, and chopped mango chunks. Gently mix this and refrigerate for at least 2 hours before serving. It tastes best when served chilled.

Frequently asked questions

Can I make mango sago vegan?

Absolutely yes. You can replace whole milk with coconut milk and sweetened condensed milk with vegan condensed milk.

Can I make mango sago the previous day for a get-together?

You can cook sago and store it in the refrigerator in an air-tight container. When it is the day, just mix all the ingredients together and serve them.

What if there is no time to refrigerate?

You can add ice cubes to the mango sago while serving if there is no time to refrigerate. I felt that adding ice cubes diluted the mango flavor.

How can I store mango sago?

Store the leftover mango sago (which is impossible unless you made a big batch) in an air-tight container in the refrigerator. It will stay good for 2 to 3 days.

Notes

1. This recipe has the privilege of customizing as per your liking or the availability of the ingredients. If you don’t have condensed milk, you can skip it and add the required sugar. 

2. You can also blend mango puree, milk, and condensed milk in a blender, then add it to cooked sago. 

3. You can also add orange jelly, coconut jelly, or pineapple jelly instead of mango jelly.

  • 1/2 Cup Mango puree
  • 1/4 Cup Sago
  • 1/4 Cup Whole milk
  • 1/2 Cup Sweetened condensed milk
  • Mango jelly as required
  • Mango chunks as required
