Why Chia Seed Pudding
She is an amazing person and an awesome cook. Her recipes are mostly Indian and Kenyan influenced. She had some mind-blowing recipes. It has been a tough time for me to choose. But I had to use up some chia seeds which I got recently. So I was searching for it and found this recipe. She also had lot many other lip-smacking desserts too. Do check it out.
Health benefits of chia seeds
Chia seeds are rich in Omega 3 Fatty acids. It is rich in fiber which helps your digestive system. If you are on a mission of weight reduction, then you have to include these seeds in your diet.
Pumpkin chia seed pudding
In the original recipe, she used strawberry and kiwi to flavor the pudding and I used my homemade pumpkin puree as I had a lot after Halloween. Yes, still I have it after making some Pumpkin Roti, Pumpkin Cake. So what’s the better way to use it other than this? The result was a delicious Pumpkin Chia seed Pudding. Hope you will give it a try.
How to make pumpkin chia seeds pudding
Making this pumpkin chia seed pudding is easy if you already have pumpkin puree. I used homemade but you can use store-bought. One thing you have to remember is to soak the chia seeds with the rest of the ingredients for at least 5- 6 hours or overnight in the refrigerator. Then it’s just assembling. You can top it with any of your favorite nuts or chopped fruits.
Yes. This chia seed pudding can be totally customized. You have to just add your favorite fruit puree like Strawberry, Kiwi, and Mango.
Absolutely. You can use coconut milk or any nut milk in place of whole milk to make it vegan. You can also use maple syrup as a sweetener.

Pumpkin chia seed pudding
INGREDIENTS
Whole Milk – 1/2 Cup
Chia seeds – 1 Tbsp
Honey – 2 Tbsp
Vanilla Extract – 1/2 Tsp
Pumpkin Puree – 1/2 Cup
Nuts – As required for topping
METHOD
- Mix milk, honey, and vanilla extract in a bowl.
- Mix in chia seeds and leave for 30 minutes at room temperature.
- Let it sit in the refrigerator for 5-6 hours or overnight.
- Before serving, layer pumpkin puree and chia seeds mixture in a glass and top it with your favorite nuts and fruits.
- Serve chilled.

- I used homemade pumpkin puree whereas you can use store-bought.
- If your pumpkin puree is bland, add a tsp of honey in the pumpkin puree.
- You can also mix the pumpkin puree along with the chia seeds mixture and refrigerate it overnight if you don’t want to layer it.
- Instead of whole milk, you can use coconut milk or any nut milk to make it vegan.

I totally love chia pudding especially for breakfast. Haven’t tried pumpkin but should be fun especially since it is fall here and you can find them in abundance. Here is a link to some I have tried in the past. My favourate is what I call Tropical Paradise with Mango.
