Puttu, a traditional breakfast recipe from Kerala, a South Indian state, is an easy, vegan, and gluten-free delicacy. I have explained the recipe with step-wise instructions.
What is puttu
Puttu is a popular breakfast dish made basically using just rice flour though there are lots of varieties made using ragi, corn, and wheat flour. It is steamed using a special equipment named puttu kutti. It is either steamed over a pot of water or on the nozzle of the pressure cooker. This is usually served with kadala curry. In some regions of Kerala, it is served with papadum and green gram stir fry. For non-vegetarian lovers, you can have it with chicken curry.

Method
Making puttu is easy and tricky too. If water is not sufficient, then it will not be cooked and if you add in surplus, then it will be clumpy. So the crucial thing is to add water little by little and mix using your hands. I have tried to explain in step-wise pictures for you guys.
Place the pressure cooker with 3 cups of water and close it with its lid. Take all the ingredients in a bowl. Once you mix the rice flour, salt along water, add grated coconut to the base of the puttu maker, layer it with rice flour, then finish it with grated coconut. Place it on the nozzle of the pressure cooker. Cook for 5 minutes or until you see the steam through the holes of the puttu maker.
What to serve
Serve it with kadala curry. You can also serve with chicken curry. Don’t miss the black tea to have along with this delicious breakfast.

Recipe for making Puttu
Ingredients
Rice flour – 1 cup
Salt – 1 Teaspoon
Grated Coconut – As required
Warm Water – 1 ½ to 2 cups of water
Method
- Take rice flour, 2 teaspoons of grated coconut, and salt in a bowl.
- Add warm water little by little till the flour looks crumbled.
- Heat a pressure cooker with 3 cups of water. Close it with the lid.
- In the puttu maker add the grated coconut, then the crumbled flour, and finish it off with grated coconut.
- Keep it on the cooker valve where pressure releases.
- Cook for 5 minutes till you see the vapor release through the holes of the puttu maker.
- Demold it to the plate.
- Serve warm with your preferred sides.
- To know the flour is ready when you hold tight in your hand, it will hold and when you crumble it crumbles again.
