Alle Belle – The name sounds interesting right? Have you ever heard of this dish? For those not,keep reading to know more about this lovely dish.

Alle Belle – For Recipe Swap

Alle Belle is a traditional Goan dish which is had as a tea time snack. It is a pancake stuffed with Coconut and Jaggery. Similar to Kerala, I observed Goans too use lots of Coconuts in their dish. Not only that, this Alle Belle is more similar to another Kerala dish called Mutta Paalada. I have posted a version of that in my this post. I have used Gluten free flour in that post. You can use that flour to make these Alle Belle. You can order the Gluten free flour here.

The reason I made these delicious dish now is because of our beautiful FB group who started a theme called Recipe Swap. In that group, each month they will pair the participants with other fellow blogger. We have to recreate one of their dish. How interesting is it,right? It’s a chance for us to recreate the dishes we have bookmarked from our fellow bloggers and didn’t find time to try them. This time I was paired with a beautiful, talented blogger Archana of The Mad Scientist Kitchen. You can see lots of amazing recipes in her blog. Do hop into her blog to see for yourself.

How to make Alle Belle

The main ingredients to make this Alle Belle is divided into two.

  1. For the Batter – Flour, Salt, Baking powder, Milk, and eggs
  2. For the stuffing – Grated Coconut, Palm Jaggery, and Salt.

In the original recipe,she used Palm Jaggery. But I used normal ones as I didn’t have any Palm Jaggery. First start by making stuffing by cooking grated coconut,jaggery and a pinch of salt till it comes together to a mass. I have used Jaggery syrup as I already had it. Prepare the batter using all the ingredients listed. the batter should be thin and not like the normal pancake batter. In a pan, grease some butter,pour the batter and swirl it. I have used this pan which I love the most. Cook it both sides and place a tsp of filling and close it. Serve warm with tea.

Alle belle recipe

INGREDIENTS

For Batter

Maida / All Purpose flour – 1/2 Cup

Egg – 1

Baking Powder – a pinch

Salt – a pinch

Milk – As Needed

Ghee/ Clarified Butter – to smear the pan

For Stuffing

Grated Coconut – 3/4 Cup ( frozen or fresh)

Jaggery Syrup – 1/4 Cup ( Check this post to make syrup)

Salt – a pinch

METHOD

For Stuffing

  • In a pan, take all ingredients listed under ‘ for stuffing’.
  • Cook in medium flame till it comes to a single mass.
  • If you are using frozen coconut, thaw it before cooking.
  • Remove the stuffing to a plate and let it cool.

For Pancake

  • In a bowl take all ingredients under ‘ For batter’.
  • Mix it and add milk slowly till it forms a thin batter.
  • Heat a tava and smear ghee/Clarified butter.
  • Pour a ladle of batter and swirl the tava, so the batter spreads thin evenly.
  • When the bubbles appear on the pancake, flip it over the other side and cook for a minute.
  • Remove it to a plate.
  • Place one tablespoon of stuffing, wrap it from the sides and roll it to make parcels.
  • Repeat it with the remaining batter and stuffing.
  • Serve warm with tea.
Cook Coconut ,Jaggery and salt
Cook till a mass
Add milk
Batter
Pour a ladle in the pan
Cook both sides
Place the filling
Fold both sides
Roll it from top

NOTES

  1. Adjust the jaggery as per your sweetness. You can use Jaggery powder instead of syrup.
  2. You can add cardamom powder to the stuffing.
  3. You can also make colorful Alle Belle by adding food coloring to the batter.

Ingredients

For Batter

    Alle Belle what a lovely name. Dish looks super tempting. Never heard of it. Completely new dish for me. Something like patisapta of Bengal. Those are also coconut stuffed pancakes. Loved it.

    I made allebele the first time with jaggery. then from the comments i got, i went looking for coconut jaggery. That is like paradise, the coconut and the coconut jaggery have some magical twist to it. try it if you get some coconut jaggery.
