Semiya Kesari

In Indian cuisine, desserts and sweets have a special place similar to the variety of savory recipes. Most of them require or can be made with minimal ingredients like this kesari. There are many variations of kesari like rava kesari, aval kesari, Pineapple kesari and so on.

Vermicelli kesari for any occasion.

The main ingredients to make this kesari is vermicelli, sugar, and water. The nuts and ghee can be skipped if you want to make low low-calorie. Or you can enhance the kesari by adding saffron strands to give it a naturally rich flavor and color.

Other recipes using semiya – Semiya upma, Semiya Kheer.

I have used roasted vermicelli in this recipe. If you don’t have roasted vermicelli, then in a deep pot roast vermicelli with 1 tsp ghee.

Instant pot method

Switch on the Instant Pot. Press the saute button. Add ghee and roast the nuts. Remove it to a plate. Add semiya/ vermicelli, water, and sugar. Close the lid. Press cancel and then the manual button. Set the timer to 1 minute and pressure cook. Once it is cooked, let the pressure release naturally. Open the lid and add the roasted nuts and you can add 1 more tsp of ghee. Serve warm or cold.

This reminds me of a sweet strawberry pasta dessert with nuts that I had many years ago in New York. I love how Indian cuisine is so creative with ingredients, and I don’t think there has been an Indian dish I didn’t like. I am going to have to add this to my list of recipes to make!
