Happy Fall with Apple Cake

I think I’m a bit late in baking fall recipes. But I think Mother Nature is going crazy this time as it already feels like winter. Still, I don’t want to miss joining the Fall baking group. I chose Apple to bake as I wanted to make my daughter have that fruit.

Whenever I give Apple in her snack box, it comes back as such. So I was looking for recipes to include fruits to have in her school snack time. That’s how I landed on this recipe. I loved how simple the recipe was and how easy to make. How to make a fresh apple cake with almonds

As I said earlier, I adapted this recipe. The only change I made is using Whole Wheat Flour to make this cake. I followed all else the same in the original recipe. It is so easy to make this cake as you don’t have to be worried about beating butter and sugar or beating eggs to peak. Just mix dry ingredients with wet ingredients. Add Apple slices and nuts. Bake. That’s it. How easy it is, Right?

But don’t underestimate the cake as it is easy to make. The cake tastes amazing. It is moist, buttery, and nutty. The Almonds on the top give a nice crunch to the moist cake. This cake is not overly sweet. It is mild to have a slice or two with your favorite tea or coffee.

What apple to use to make cake?

I used Granny Smith Apples as I had only that at the time of baking the cake. You can also use Honey Crisp Apples.

Apple cake recipe with almonds

INGREDIENTS

Whole Wheat Flour – 1 1/2 Cups

White Sugar – 1/2 Cup

Baking Powder – 1 1/2 Tsp

Baking Soda – 1/4 tsp

Salt – A pinch

Melted Butter – 3/4 Cup

Eggs – 2 Nos

Vanilla Essence – 1 Tsp

Milk – 1/2 Cup

Apple – 1

Almond – 1/3 Cup Sliced

METHOD

  • Pre Heat the oven to 350 Deg F.
  • Grease the cake pan.
  • Peel and core the apple. Make thin slices. Keep Aside.
  • In a bowl, take all dry ingredients except almonds. Whisk it.
  • In another bowl, whisk all wet ingredients.
  • Slowly add dry ingredients to the wet mixture and mix gently.
  • Pour the batter into the greased cake pan.
  • Place the sliced apples on the batter and sprinkle the sliced almonds.
  • Bake the cake in the preheated oven for 35 – 40 mins or till the inserted toothpick comes out clean.
  • Let it cool down completely.
  • Serve.

  2. No much better than apples and almonds together. Throw that into a yummy cake and you have the perfect dessert!

  3. Would you recommend adding any cinnamon, nutmeg, allspice, etc to this to make it more of a spice cake or would that take away from the intended flavor?

      1. Thank you Lathiya, I ended up using cinnamon. This is perfect for those who do not like overly sweet cakes, like myself. It turned out as more of a bread and it was delicious. Enjoyed by all, especially my 3 year old!
