Semolina Eggless Carrot Cake
What is Semolina? Semolina is the coarse, purified wheat middlings of durum wheat mainly used in making upma, pasta, and couscous. Making the cake using Semolina is healthier than the All-purpose flour. You can also use brown sugar instead of sugar to make it healthier. The cake is soft and tastes great the next day.

How to make Eggless Carrot Cake using Semolina?
We are using yogurt in place of Egg in this recipe. Mix all the dry ingredients in a bowl. Then, beat the yogurt and sugar till the sugar dissolves. Then add oil to it and mix. Mix the dry ingredients with the wet ingredients. Then gently mix the freshly grated carrots with the batter. Transfer the batter to the greased pan and bake for 30 minutes in the preheated oven at 350 Deg F. Check by inserting the toothpick and if it comes out clean, the cake is done. Once it is cooled down, remove it from the pan, dust it with powdered sugar, and serve.

1 Cup = 240ml 1 Tbsp = 15g 1 Tsp = 5g
Ingredients
Semolina/ Sooji/ Rava – 1 Cup (128g)
Sugar – ½ cup (100g)
Carrot – ½ Cup (64g) grated
Yogurt – ¼ Cup
Oil – ¼ Cup
Milk – ¼ Cup
Baking soda – 1 Tsp
Baking powder- 1 Tsp
Cinnamon Powder – ½ Tsp
Nutmeg powder – ⅛ Tsp (optional)
Method
- Preheat the oven to 350Deg F.
- Grease and dust the cake pan.
- In a bowl, beat yogurt and sugar till the sugar dissolves.
- Then add oil and mix it.
- In another pan, mix semolina, baking powder, baking soda, cinnamon powder, and nutmeg powder (if you are adding).
- Add this dry mixture to the yogurt, sugar, and oil mixture.
- Mix it thoroughly.
- Add milk and mix it.
- Now add grated carrots and mix gently.
- Pour the batter into the greased cake pan and bake for 30 minutes in the preheated oven.
- Insert a toothpick into the cake after 30 minutes. If it comes out clean, then the cake is done.
- Remove from the oven and let it cool completely before cutting.
- Serve warm or cold.



Notes
- Each oven is different so the timings may differ. After 25 minutes, keep an eye on the cake. So it doesn’t get burned.
- Try to add freshly grated carrots for the best results.
