Hi friends, so how was your Christmas? Hope you all had a blast. Now let’s welcome the New Year with this healthy baking – Whole Wheat Mango Cake – Eggless, Butterless.

Whole Wheat Mango Cake

If you are following this space, you would have noticed that I’ve been on a baking spree recently. I don’t know how but I have been baking a lot than before.

So when I was thinking about what to bake for New Year, this Mango cake idea popped up. I have earlier made Whole Wheat Banana Cake and it was a hit in our family. I thought of making it in the Mango flavor as it was our family favorite. This is obvious from my these posts, Coconut filled Mango crepes, Mango Yogurt Parfait, Mango Jam, Mango Pistachios Smoothie, Mango Lassi still lot more. From this, you should not be surprised why I chose to bake Whole Wheat Mango Cake.

How to make Whole Wheat Mango Cake

As I said earlier, I adapted this recipe from Eggless Whole Wheat Banana Cake I made (will update that recipe also soon). Both this mango and banana cake became our kid’s favorite and my daughter would ask me to pack that in her snack box. So why stop? Just grab the ingredients and start baking. You will fall in love with this Whole Wheat Mango Cake – eggless and butterless.

To make this cake eggless, I used coconut oil. You can use olive oil too. The sweetness is mild, the way we liked it. But you can adjust the sugar as per your requirements and the sweetness of the mango.

Eggless whole wheat mango cake recipe

INGREDIENTS

Whole Wheat Flour – 1 1/2 cups

Mango Puree – 1/2 cup

Milk – 1/4 cup

Sugar – 1/2 cup

Coconut Oil – 4 Tbsp

Vanilla Essence – 1/2 tsp

Baking powder – 1 tsp

Baking Soda – 1/2 tsp

Salt – a pinch

METHOD

  • Pre – heat oven to 350 Deg F.
  • Sift Whole wheat flour, baking powder, baking soda, and salt in a bowl.
  • In another bowl take coconut oil and sugar and mix till the sugar dissolves. Then add vanilla essence and mango puree and mix thoroughly.
  • Add milk.
  • Then add flour slowly while mixing till all the flour mixture is fully incorporated.
  • The batter will be a little thicker.
  • Pour the batter into a greased pan and bake it in a preheated oven for 25 – 30 minutes or till the inserted toothpick comes out clean.
  • Serve. This can be stored in a refrigerator for a week in an airtight container or wrapped in cling wrap.
Flour + Baking pow+Baking Soda +Salt
Oil + Sugar
Vanilla essence
Mango pulp
Add Flour
Pour in the greased pan
Bake till done

  1. You can adjust sugar as per your requirements.
  2. I used Fresh Mango Puree. You can also use store-bought.

    Your recipe sounds quite nice with simple ingredients, plus healthy too. Will try this definitely. Just a query, will coconut oil smell supercede the mango flavour?
