How to make Bitter gourd/ Pavakkai stir fry
Making this stir fry is so easy. Chop the bitter gourd into thin slices after deseeding. Heat oil in a pan. Crackle mustard seeds and chana dal. Add onions and other spices. Cook bitter gourd in medium flame till the onions caramelize. Drizzle oil when needed and cook till golden. Adding lots of grated coconuts gives a sweet flavor suppressing the bitterness.

Recipe for Bitter gourd/ Pavakkai stir fry
Ingredients
Bitter gourd – 3 medium-sized
Onions – 1 cup finely chopped
Coconut – 1/2 cup grated
Channa dal – 2 tbsp
Mustard seeds – 1/2 tsp
Turmeric powder – 1/4 tsp
Red chili powder – 1 1/2 tsp
Salt – as required
Curry leaves – few
Oil – 2 tsp
Method
- Cut half the bitter gourd lengthwise, deseed, and cut into thin pieces.
- Heat oil in a pan and crackle mustard seeds.
- Add channa dal, and when it turns golden add onions and curry leaves.
- When onion turns golden add bitter gourd, spices, and grated coconut and stir for a minute.
- Cook covered in medium flame.
- Check for salt and add if necessary.
- Stir at regular intervals to avoid burning.
- When it’s done cook uncovered for a few more minutes in slow flame.
- You can drizzle oil on the sides occasionally.
- Cook till bitter gourd turns golden.
- Serve with rice.

- 2 Tbsp Chana dal
- 1/2 Tsp Mustard seeds
- 1/4 Tsp Turmeric powder

- Salt As required
- Curry leaves few
- 2 Tsp Oil
Instructions
