This Caramel Bread Pudding is an easy dessert that can be made without any fuss. This pudding is not baked but steamed. I have given both stovetop and Instant Pot methods.

Steamed Caramel Bread pudding

The bread pudding is an easy and delicious way to use your leftover stale bread. Stale bread is perfect for making bread pudding, unlike fresh bread. Making this pudding is so easy that you don’t need any special equipment, just a blender, and a steamer. A stainless steel pan to make the caramel.

This pudding is creamy, unlike other bread puddings with chunks of bread. I have used whole wheat bread for this recipe. You are most welcome to use white bread.

How to make caramel bread pudding

The process starts with making the caramel. Use a stainless steel pan to make the caramel. Take sugar and water in the pan and wait till it turns golden brown. Do not stir with a spoon. Just twirl the pan till the color turns dark golden. Switch off and pour the caramel into the bowl you are making the pudding. You have to act quickly in this step, or else the caramel gets hard.

Then take the remaining ingredients, in a blender and pulse it till all blend. Pour it into the bowl with caramel. Cover this bowl with foil and poke a few holes in the foil. Place it inside the steamer and steam it for 10 to 15 minutes or till the inserted toothpick comes out clean. Place the bowl in the refrigerator for 30 minutes to 1 hour. Then invert the bowl on a plate and unmould the pudding. Cut and serve your guests.

What bread to use to make bread pudding?

I used whole wheat bread to make this pudding but you can also use white bread. 

Can I make this bread pudding in Instant Pot?

Absolutely, you can make this in your Instant Pot. Just follow all the steps until you cover the pudding bowl with the foil and prick it. Pour a cup of water into your inner pot of Instant Pot. Place the trivet or steamer stand. Then place the foil-covered bowl carefully on the trivet. Close the lid. Press the manual button and set the cook time to 12 minutes. Once done, let the pressure release naturally and remove the bowl from the instant pot. Refrigerate the bowl for 30 minutes to 1 hour. Cut and serve.

Recipe to make the best-steamed bread pudding

Ingredients

Bread – 4 slices

Milk – 1/2 cup

Egg – 2

Sugar – 1/2 Cup

Butter – 1 Tbsp

Vanilla extract – 1 tsp

To make caramel

Sugar – 3 Tbsp

Water – 1 Tbsp

Method

  • First, make the caramel by taking sugar and water in a stainless steel bowl.
  • Do not stir with a spoon. Just twirl the pan till the color turns dark golden. When the sugar turns golden brown, switch off. Pour it into the mold, swirl around the bowl, and keep it aside. Let it cool.
  • Take the remaining ingredients in a blender and blend till smooth.
  • Pour it into the bowl with caramel.
  • Heat idli pan/ steamer with water. Keep a base plate.
  • Keep the bowl and steam till the inserted toothpick comes out clean.
  • Let it cool completely before unmoulding.
  • You can keep it in the fridge if you like to have chilled.
  • Unmould and serve. Best when chilled.

Notes

  1. I used whole wheat bread. You can use white bread too.
  2. I didn’t trim off the edges of the bread but you can if you want.

    Hello Lathiya,

    I’d like to try your recipe, but I don’t have anything to steam the cake in… Do you think it is possible to bake it in the oven? If so, how should I proceed?

      Yes, you can. Place the custard filled pan inside a tray. Pour hot water in tray till it fills 1 inch. Bake the pudding in pre-heated oven at 300 deg F (150 deg C) for 45 to 50 mins. Once the pudding is done (the inserted skewer comes out clean), remove the pan from the tray. Let it cool down completely. Refrigerate it for 2 hours before demold.     The scale of the ingredients looks strange. What size bowl did you use to steam in? How many portions does your recipe make?

      I made this in an IKEA cake pan. You can try making it in a 6″ cake pan. It serves 4 to 6 people based on the size of the slice. Hope this helps.
