Hibiscus Lemon Popsicle
As summer vacation began, I was looking for recipes to treat kids and came up with a hibiscus lemon popsicle inspired by an Instagram video (unfortunately, I forgot the name of that Instagram handle). Kids not only loved the flavor of the popsicle but also the process and the little magic of color change when you add the dash of lemon to the hibiscus extract.

How to make hibiscus popsicle
Ingredients

Method
I have used fresh hibiscus flowers (Hibiscus rosa-sinensis) in this recipe. We must remove the calyx (green part) and pistil (the long tubular part).

Wash the petals and put them in a bowl. Pour boiling water on the petals and let the color of the petals seep into the water. After 2 minutes, remove the petals. Now, add the preferred sweetener and lemon juice to the bowl. You can enjoy watching the solution turn change the color. Pour this hibiscus lemon solution into the popsicle mold and freeze till it sets. Enjoy your hibiscus lemon popsicle.
