Ice Cream Cake

I got the inspiration for this cake from this site. It is my friend Vidhya’s blog. We came to know about each other through blogging and she is one of the people who encouraged and helped me in blogging.

As the days are getting colder, I want to finish up the Ice cream that was lying in my freezer. I don’t want to eat it as such but to use it in any recipe. That’s when I stumbled upon her recipe and without a second thought, I wanted to try it.

How to make Ice Cream Cake

When I say Ice cream cake, it’s not the usual Ice cream sandwiched Cake. It is a cake baked using Ice cream. You can use any flavored Ice cream. I made a little tweak in the recipe though. It was a hit in our family. Both the kids and my husband loved it.

You need just 4 ingredients as the title says. Just Flour, Ice cream, Baking powder, and Sugar. You can add any nuts, chocolate chips, tutti frutti to the batter when you bake. It’s all up to your imagination. I used homemade Mango Ice cream for this recipe and made it in two pans one with tutti frutti and another with Chocolate chips. Both were great.

INGREDIENTS

Ice cream – 2 cups Softened

All-Purpose Flour – 1 1/2 cups

Baking Powder – 1 1/2 tsp

Sugar – 1/2 cup

Chocolate chips/ Tutti frutti – 1/4 cup (Optional)

METHOD

  • Preheat the oven to 350 deg F.
  • Take ice cream and sugar in a bowl.
  • Using a whisk or hand blender beat it thoroughly.
  • When the sugar is dissolved, add flour and baking powder.
  • Fold it well till the flour is incorporated.
  • Add Chocolate chips or tutti frutti.
  • Pour the batter into a greased cake pan.
  • Bake it in a preheated oven for 20 – 25 minutes or till the inserted toothpick comes out clean.
  • Once it cooled down completely turn the pan upside down and transfer the cake to a plate.
  • Serve.

NOTES

  1. You can use any flavored ice cream, store-bought or homemade.
  2. You can add any nuts to this cake.
  3. The cake is mildly sweet. So adjust the sugar as per your requirements.
  4. I baked it in two small pans. But this can be made in a single pan.

  1. I tried this cake with leftover vanilla icecream that I had. I substituted sugar with jaggery powder and added chopped cashews, almonds, walnuts and tutti frooti. It was moist, delicious with perfect sweetness and the nutty bute..loved it! Bonus was the iccream tub got over!

  6. Wow Lathiya… never heard of a cake made with ice cream. A brilliant way to use up leftover ice cream before it goes all gritty in the freezer. Love the color of the cakes.
