Rice Kheer or Indian Rice Pudding is a creamy and luscious dessert made during special occasions. .It is made easy now by making it in Instant pot. No cream, no condensed milk, just rice, milk, and sugar. Yet it is creamy every time. Let’s see how to make it.

What is Kheer?

Kheer is a simple dessert made using basic ingredients like rice, milk, and sugar. The other flavor add-ons are options and can be used as per personal liking. It is usually flavored with cardamom, cashew, raisins, almonds, saffron or pistachios.

The other variation of kheer is Vermicelli Payasam.

Pro tip – Always use the whole milk for the best creamy kheer.

Ingredients to make Rice Kheer

Rice – Usually, Basmati rice is used to make the kheer but you can use any white rice if you can’t find Basmati.

Milk – I prefer to use whole milk to get the creamy and luscious kheer.

Sugar – I used Turbinado Raw sugar and I loved the color it gave the kheer. But you are ok to use normal granulated sugar.

How to make Rice Kheer in Instant pot?

Soak the rice for 30 minutes. Wash and drain the rice. Switch on the Instant pot and add ghee. Roast the cashew and raisins till golden. Remove it to a plate. Add 1 cup of water to the pot. When it starts boiling ( should not boil) add milk, rice, and sugar. Cover the lid and pressure cook for 20 minutes. Once done, let the pressure release naturally. When the pressure is released, open the lid and add the roasted nuts. If you are adding any other flavor, add it now.

The kheer at that time may look very liquid but when it cools down it thickens and comes to the perfect consistency. So do not reduce the liquid quantity as mentioned.

Pro-tip – you can also roast the rice in ghee before adding it to the milk.

How to make Rice Kheer on Stovetop?

Heat a thick-bottomed pan. When it is hot, add ghee. Roast the nuts and remove them to a plate. Add water and it starts to boil add milk, rice, and sugar. Let the rice cook on medium flame. Keep stirring, so the milk doesn’t burn. When it starts to thicken which takes 30 to 45 minutes, add the roasted nuts. Serve.

Can I make Kheer vegan?

Yes, you can make it vegan by using Almond milk in place of whole milk.

How to serve Kheer?

You can serve this kheer warm or cold as per your preference. It tastes great both ways.

Recipe to make Rice Kheer – Indian Rice Pudding

Ingredient

1 US Cup = 240 ml, 1 Tbsp = 15g

Basmati rice – ½ Cup (95g)

Water – 1 Cup

Whole Milk – 5 Cups

Sugar – 1 ½ Cup ( Adjust as per your preference) ( 300g)

Ghee – 2 Tbsp

Cashew – few

Raisins – few

Method

  • Soak the rice for 30 minutes. Wash and drain. Keep aside.
  • Switch on the Instant Pot. Add ghee.
  • Roast the cashews and raisins till it’s golden. Remove it to a plate.
  • Add 1 cup of water to the pot. When it starts to boil, add 5 cups of milk.
  • Add the rice and sugar. Check the sugar and adjust as per your preference.
  • Close the lid. Check the valve for its position.
  • Press the manual button and cook time for 20 minutes.
  • Once done, let the pressure release naturally.
  • Open the lid and add the roasted nuts.
  • The kheer thickens when it cools down.
  • Serve warm or cold.

Notes

  1. You can also roast the rice in ghee before adding it to the milk.
