Vegan Magic Cookie Bars
So the story goes like this. I had lots of graham cookies and frozen bananas. My kids won’t eat graham cookies anymore and I’m tired of using frozen bananas in pancakes. You can see lot many pancakes using bananas in this space like Eggless Whole Wheat banana pancake, Eggless Whole wheat apple Pancake, Whole wheat banana Pancake with caramelized apple, Whole Wheat Banana Coconut Pancake. As my pancake lists are growing, I don’t want to try another pancake with those bananas.
As I was looking for a recipe where I could use these graham cookies, I stumbled upon Vegan Magic Cookie Bars. I jumped out with joy as not only did I use my graham cookies but also my frozen bananas. This is much easier to make as the name suggests it’s really magical. My daughter liked this so much that she keeps on asking for this.
How to make Vegan Magic Cookie Bars
Usually, Magic Cookie Bars are called 7-layer cookie bars as it is made in 7 layers which most of the time, the crackers layer, any nuts layer then topped with sweetened condensed milk layer. But as I’m making this vegan, I didn’t use sweetened condensed milk. Instead, I used bananas and my cookie bar has just five layers, which means just five ingredients. How cool, is it?


My cookie bar’s first layer is a graham cookie layer, then topped with banana, chocolate chips, and roasted coconut to add crunch. If you like nutty, you can add nuts too. In this, we have to bake the graham layer first to set, if not when we add the banana layer the graham layer will become soggy. To avoid this, bake the graham layer for 15 minutes first before adding other layers. Hope you will give it a try and I can’t wait for your feedback.

Vegan Magic Cookie bar recipe
INGREDIENTS
Graham Cookies – 2 cups
Melted Vegan Butter / Honey / Maple Syrup – 4 tbsp
Banana – 3
Chocolate chips and butterscotch chips – as required
Coconut – 1 cup shredded ( see notes)
METHOD
- Preheat oven to 350 Deg F.
- Take graham crackers in a food processor and pulse them. Add Melted butter or honey or Maple syrup and pulse it to form a crumbled texture.
- Take a baking tray. You can line it with foil or just grease it.
- Pour the crumbled graham cookies into the baking tray and press it tight.
- Bake this in preheated oven for 15 minutes.
- After 15 minutes take out the graham layers and let it cool for 15 minutes.
- In the meantime, mash the bananas.
- Once the graham layers are cooled down, pour the mashed banana over it and spread it even.
- Add the required chocolate chips. Here I’m not restricting you to use fixed quantity. So go generous (lol).
- Top it with roasted Shredded Coconut.
- Again bake it for 30 minutes.
- When done take it out from the oven and let it cool.
- Once cooled down completely, cut it into squares and serve.
- Can be refrigerated in airtight container for 2 weeks.








NOTES
- I used normal shredded coconut and roasted it when I baked the graham layer. You can use desiccated coconut too. If using that, then you can add desiccated coconut directly when baking the bars. Don’t have to roast it.
- You can use any chocolate chips of your choice.
- If you don’t want your coconut to get brown, then just bake the bars for 20 – 25 minutes.

These vegan cookie bars sound wonderful and it’s a great way to use up bananas. I have a chocolate banana muffin recipe I often make but like with you and pancakes, I do often want to make something different with those leftover bananas for a change!
