Vegetable Pulao in Instant pot ( using boiled ponni rice)

After making Vegetable biriyani successfully using boiled ponni rice, I got the confidence to make other rice varieties using it. This time I made Vegetable Pulao and it also turned great.

Vegetable Pulao

This Vegetable Pulao is so easy to put up and the Instant Pot makes the job easy for you. As I said earlier, I made this using boiled ponni rice. You can make this recipe using Basmati rice too. The only thing you need to note is the water ratio. If using Basmati rice, use 1:2 rice and water ratio.

Vegetable pulao in Instant pot

The procedure starts with soaking the rice. Then switch on the Instant Pot. Add the oil and the whole spices. Saute and add sliced onions. When translucent, add ginger garlic paste. Then add the vegetables. Cover with a glass lid and cook for 2 minutes. Then add rice and water. Check the salt and close the lid. Press the rice button and once done let the pressure release naturally. Serve with Instant pot Chicken tikka masala, Instant pot Chettinad chicken curry, Instant pot Palak Paneer.

Instant Pot vegetable pulao recipe

Ingredients

Boiled ponni rice – 1 1/2 cups

Water – 2 cups

Coconut milk – 1 3/4 cups

Green Peas – 1/4 cup ( I used frozen)

Onion – 1/2 cup thinly sliced

Green chili – 2 slits lengthwise

Ginger garlic paste – 1/2 tsp

Bay leaf – 1

Cinnamon stick – a small piece

Cloves – 2

Cardamom – 1 or 2

Oil – 2 tsp

Salt – as required

Method

  • Soak rice for 30 mins and drain water. Keep it aside.
  • Switch on the Instant Pot and press the saute button.
  • Heat oil in the pot. Add bay leaf, cinnamon stick, cloves, and cardamom.
  • Stir for a few seconds and add onions and green chilies. When onions turn translucent add ginger garlic paste.
  • When the raw smell goes green peas. Stir and cook covered for 2 minutes.
  • Add drained rice. Stir gently.
  • Add water and coconut milk. Add the required salt. Close the lid and press the rice button.
  • When done, let the pressure release naturally. Serve along with your favorite gravy.

Notes

  1. You can add cashews and raisins while sauteing onions.
  2. Add vegetables like chopped carrots, corn, beans, and potatoes.
  3. You can add only water or change water, or coconut milk ratio as per your choice.

    I have not had a chance to use ponni rice in my pulao recipes, however, your pics with perfect fluffed up grains of the rice are tempting me to try it soon. Loved the use of coconut milk as well…

    Rice looks perfectly cooked in that Pulao. This is such a simple and easy to make dish — great to serve with any spicy curry. I’ve not used ponni rice before will have to look for it in the Indian grocery.

    Vegetable pulao gets cooked quite often in my kitchen especially during winters when a lot of fres vegetables are available in the market. I never tried making it with coconut milk. Loved the idea, will try it next time.
