The Cheese Quesadilla recipe with homemade salsa is a kid-friendly lunch or dinner. This is perfect for the lunch box too. You need just a few basic ingredients.

Cheese Quesadilla

Can you believe that this recipe is from my daughter? Yes, she is part of her school’s cooking academy and in their academy, they tried a few recipes and made a simple cookbook out of it. This quesadilla and salsa recipe is from that cookbook. She wanted me to try her recipes and publish them on my website.

So as per her request here is her cheese quesadilla with the salsa. The recipe is super quick and gets ready in 5 minutes.

How to make cheese quesadilla

You need Tortillas ( either store-bought or homemade), and cheese. Heat a pan. When the pan is hot, place one tortilla and spread the cheese on it. Place another tortilla on it. Press tightly with a spatula. Let it cook for 2 minutes, flip it, and cook for 2 more minutes. Cut it and serve warm with salsa or any dip.

Best cheese for the quesadilla

Any good melting cheese like blue brie, cheddar, Monterey Jack, Swiss, or Mozzarella is good to make a Quesadilla. 

How to make Salsa

You need red onion, tomato, cilantro, salt, and lemon/ lime juice. Take all the ingredients in a blender and pulse them coarsely. If you need spicy, you can also add Jalapenos while you blend the ingredients.

Recipe for Quesadilla with stepwise instructions

Ingredients

For Quesadilla

Tortilla – 4 ( I used Turmeric sweet potato tortilla)

Mozzarella Cheese – ½  Cup grated

For Salsa

Onion – ¼ Cup chopped

Tomato – 1 

Lemon Juice – 1 Tbsp

Salt – as required

Cilantro – few 

Method

To make Quesadilla

  • Heat a wide pan or Tawa.
  • When the pan is hot, place a tortilla.
  • Spread half of the grated cheese. Place another tortilla on it.
  • Press with a spatula. Cook for 2 minutes, flip it over, and cook for another 2 minutes.
  • Cut and serve.

To make salsa

  • Take all the ingredients to make salsa in a blender.
  • Pulse it coarsely and serve.

  1. This is perfect for an afternoon snack or late lunch. A little sprinkles of lemon juice always does the trick. Great recipe!

  2. I’ve been using gluten-free tortillas lately. Definitely not as good, but there are some that are better than others. Salsa is a must with these cheese quesadillas!

  3. This is a great recipe to serve for Cinco de Mayo. We like to go out to celebrate, but with everything going on, I don’t think that’s going to happen this year.
