Vegan Wraps – The Real Coconut review
So as you all know I love coconuts. When the Real Coconut team asked if they could send some products for review, I readily accepted. Their products are Organic, Vegan, Gluten-free, and free from most of the allergens. They make their tortilla chips and wrap them using coconut flour. I hear you ask, do they have only a single flavor that is coconut? No, though their product is made of coconut flour, they have a different flavor in their Tortilla chips and wraps. Please check out their page The real coconut.

They send me their Large Coconut wraps and two varieties of tortilla chips. I decided to make Vegan wraps with curried chickpeas. So this is made with minimal ingredients in my pantry.
How to make Vegan Wraps with Grain-free wraps
Apart from the Vegan Coconut flour wraps, we need a few ingredients. I have used dried chickpeas which I soak overnight. You can use canned chickpeas if you have them. Other than that we need tomato, onion, and a few basic spice powders. I made the curried chickpeas filling in the Instant Pot. I will also give you some variations you can try.

Ingredients used

Instant pot curried chickpea filling
I have soaked the chickpeas overnight. You can soak at least for 8 hours. Switch on the Instant Pot and press the saute button. Add oil and when it is hot, add chopped onions. Saute it till golden and add ginger garlic paste. Once the raw smell of ginger garlic paste goes, add chopped tomatoes and add the spice powders. Add the soaked chickpeas and 1 to 1 ½ cups of water. Add the required salt and close with the pressure cooking lid. Check if the valve is in position. Press the manual button and adjust the cook time to 20 minutes. Let the pressure release naturally.

Once the pressure is released, open the lid and press the saute button. Let the curry boil and become thick. Switch off and you can garnish with cilantro if you wish.
How to assemble the vegan wraps
Place a coconut flour wrap flat on a surface or plate. Then arrange the lettuce leaf, three spoonfuls of curried chickpeas, and some grated carrots. Roll the wrap from one side tightly and make it a wrap. Enjoy with your favorite dip or as such.

Variations of the filling
- I have also tried paneer in the place of chickpeas. If you are using paneer or tofu, then add it in the last step once the onion and tomato are cooked thoroughly.
- You can also use mushrooms instead of chickpeas.

My verdict about the product
It is versatile and well-packed for freezing or refrigerating. I loved it. It had a small sweetness from the coconut which I loved. The chips at the first bite were bland but had a coconut taste at the end. The final verdict is I just loved the product and if you are looking for vegan, gluten-free products for a snack or main course I will definitely recommend this. With their grain-free, vegan wraps the ideas are endless.

Vegan Wrap with Chickpeas filling recipe
1Cup – 240ml 1Tbsp – 15g 1Tsp – 5g
Ingredients
Coconut wraps – 4
Chickpeas – 1 Cup Soaked for at least 8 hours
Onion – ½ Cup Chopped
Tomato – 1 large chopped
Turmeric powder – ½ Tsp
Red chili powder – 1 Tsp
Coriander powder – 2 Tsp
Garam Masala – ½ Tsp
Ginger garlic paste – ½ Tsp
Water – 2 cups
Salt – as required
Oil – 1 Tsp
Grated carrots – ½ Cup
Lettuce leaf scoops – 4
Method
Imp – Wash your hands, cutting board, knife, and utensils.
To cook the chickpea filling in the instant pot
- Switch on the Instant Pot. Press the saute button.
- Add oil and when it is hot add chopped onions.
- Saute it till golden.
- Then add ginger garlic paste and saute till the raw smell goes.
- Add chopped tomato and spice powders.
- Now add the soaked and washed chickpeas. Pour 2 cups of water and the required salt.
- Close the lid and check if the valve is in a resting position.
- Press the manual button and then adjust cook time to 20 minutes. Once done let the pressure release naturally.
- Open the lid and press the saute button again.
- Cook until all the liquid evaporates and then we get thick chickpeas curry.
- Check the spice and salt. Adjust it.
- Switch off.


To cook the coconut Wraps
- Remove the wraps from the packet.
- Heat the griddle or pan.
- Smearing oil is optional. I didn’t do that.
- Place the coconut wraps on the hot griddle and cook both sides for 2 minutes.
- Remove from the griddle to a plate.
- Repeat with the other wraps you require.
- The real coconut, coconut wraps can be refrigerated or frozen. If you are freezing then thaw it before the night you want to use it in the refrigerator.

To Assemble
- Take the cooked coconut wrap on a plate.
- Place the lettuce leaf scoop and three spoonfuls of curried chickpeas.
- Add some grated carrots. Roll the wrap from one side tightly and make it a wrap.
- Enjoy with your favorite dip or as such.

- Adjust the spice powders as per your preference.
- You can use paneer, tofu, mushroom, or chicken in the place of chickpeas as you prefer.
- You can also use canned chickpeas.

- 1 Tsp Red chili powder

- 2 Cups Water
- Salt as required
- 1 Tsp Oil
- 1/2 Cup Grated carrots
- 4 Lettuce leaf scoops
