Happy 4th July friends. I present to you my new recipe Crunchy top Rose flavored Mini Muffins. As I already said in that previous post, I had tried this recipe once before which was a flop one. But I determined to try that again and this time I succeeded. As the popular saying goes “Don’t judge a book with its cover”, you don’t judge this muffin with the looks. It may not look beautiful but I assure you it tastes great. I say this because my daughter who is a picky eater loves this.

Crunchy top Rose flavored Muffins(egg less)

These muffins have an awesome rose flavor that comes from the rose essence. I substituted rose essence for the usual vanilla. The result is a beautiful rose aroma all around your house. In this crunchy top Whole wheat Rose flavored Mini Muffins, I used only 1/2 tsp rose essence. It was mild for me. If you like it more or less please free feel to use it. I call this crunchy top because its outer layer is a little crunchy while the inner is the soft melt-in-mouth muffins.

These crunchy top-Rose flavored Mini Muffins are made with whole wheat and its eggless too. I used bananas as a substitute for eggs. You can use eggs if you want. You can add chocolate chips or walnuts to it to add an additional crunch. This makes a great tea-time snack. You can make this for a party or get together too. Rose flavored muffins recipe

INGREDIENTS

Whole wheat flour – 1 cup

Butter – 1/4 cup

Sugar – 1/2 cup

Mashed banana – 1/4 cup

Red food color – 1/8 tsp

Rose essence – 1/2 tsp

Baking powder – 1/2 tsp

Milk – 1/4 cup

Salt – a pinch

METHOD

  • Preheat the oven to 350 deg F.
  • In a bowl sift flour, baking powder, and salt. Keep aside.
  • In another bowl, beat butter and sugar till creamy.
  • Add mashed banana and mix. Add red food color and rose essence.
  • Add milk and mix thoroughly.
  • Now add the sifted flour slowly and mix till all are incorporated.
  • The batter will be thick.
  • Scoop it into the greased muffin pan.
  • Bake it in preheated oven for 10-12 minutes.
  • Serve.

NOTES

  1. I used a mini muffin pan and it yielded 18 mini muffins in the above measurements.
  2. I baked it for 12 min, so it was more crunchy. If you want a little crunchy, bake it for 10 mins.
  3. You can add chocolate chips or walnuts to the batter while baking.
