Panellets
Panellets are small cakes or cookies in many shapes but mainly round. The main ingredients comprise sweet potatoes and almonds. Actually, you need just a handful of ingredients. These cookies were dated at least from 18 th century. These are so easy to make and so addictive. I had to literally stop my daughter and husband to keep munching on these. They are about to finish these the same day I made them. So I warn you to save some for yourself before you serve.
How to make panellet
I adapted this cookie from this site when I was in search of cookie recipes for Christmas. You need just mashed potato, roasted coconut, and ground almonds. Mix it and refrigerate it for 1 hr to 2 days. This is to coconut to absorb the moisture of sweet potato. Then roll it and bake it. How easy it is right?
How does it taste
When I saw coconut in it, I decided to give it a try. I was sure it would taste good but when I tasted it after baking, it was fabulous. I’m not exaggerating. You will know when you try for yourself. It is crunchy outside, and soft and chewy inside.
Flavors in it
I have used vanilla essence in these cookies. But you can also use ground cardamom for another flavor. Actually, I’m going to try cardamom. You can also use almond extract or lemon zest.

Panellet recipe
INGREDIENTS
Sweet Potato Mashed – 1/2 Cup
Almonds – 1/2 Cup ( with or without skin)
Coconut – 1 Cup grated
Organic Raw Sugar – 3/4 Cup + 2 tbsp for rolling cookies
Egg white – from 1 egg
Vanilla essence – 1/2 Tsp
Salt – a pinch
METHOD
- Toast the grated coconut in a wide pan till light golden. Remove from pan and keep aside.
- Pulse the almonds coarsely.
- In a bowl, take all the ingredients and mix them to a mass.
- Cover it and chill in the refrigerator for 1 hour to 2 days.
- Remove from the refrigerator, and scoop in a tablespoon. Roll the top in sugar.
- Place it in a parchment paper-laid cookie pan.
- Bake in a preheated oven at 325 deg F for 25 minutes.
- The cookies will be crusty outside and soft, chewy inside.












NOTES
- These cookies will not spread like others.
- Bake till the bottom of the cookie turns light golden.
- You can use almond extract, crushed cardamom, or lemon zest in place of vanilla essence.
- The cookie will be soft when done but turn crunchy after cooling down.
Panellet – Gluten free Sweet Potato & Coconut Cookies
Ingredients
- 1/2 Cup Sweet Potato Mashed
- 1/2 Cup Almonds with or without skin
- 1 Cup Coconut Grated
- 3/4 Cup Raw Organic Sugar
- Egg White from 1 Egg
- 1/2 Tsp Vanilla Extract
- Salt A pinch
Instructions
